COMMERCIAL DESCRIPTION
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Bottle picked up at Zyn in Calgary. Pours a slightly cloudy amber, with a finger of white head and loads of spiderweb lacing. Nose is sweet and so typically Belgian yeast. Tastes sweet, bitter and very, very Belgian, a little bit of hop in there too. Pretty good stuff.

A decent fruity lambic-like Belgian IPA. Pours a deep orange with a thick white head. Smells of spice, citrus and general fruit. Taste starts sweet, continues that way to end in just a bit of sourness and spice. Had on tap at the Stubborn Goat in Halifax.

Draught @ Alibi Room, Vancouver. Clear gold, with little head or carbonation. Lil’ banana nose. Complex flavour; malty, herby, yeast and hop bitter finish. Would like it to be a bit less boozy, but it’s good.

Bière jaune orangée, bien voilée, très effervescente, et surmontée d’un col blanc immaculée, moyennement large, mais très dense, très mousseux, qui colle sur les parois du verre, et qui semble éternel. Arômes de pain frais, pâtisserie, malt mielleux, léger sucre d’orge, fruits du verger (pêche, poire, pomme…) et levure belge. On décèle également certains effluves plus houblonnés en arrière-plan, mais difficile à cerner et à décrire. Ce houblon semble à la fois floral, poivré et herbacé. Beau nez bien agréable, très belle complexité, mais ça manque passablement d’intensité cependant. En bouche, pétillement moyen-élevé sur la langue, breuvage bien mousseux, et très belle onctuosité, c’est moelleux, soyeux et velouté au palais! Au goût, ça rejoint pas mal le nez avec du pain frais et de la pâtisserie, un léger sucré style miel et/ou sucre d’orge, d’abondants fruits du verger, et une levure belge discernable. Le houblon est quant à lui heureusement bien plus présent en bouche qu’au nez, et il est principalement herbacé et poivré avec également quelques accents de conifère. L’amertume est de faible à modérée. Bière heureusement bien plus intense en bouche qu’au nez, très belle complexité, très belle intégration des différentes saveurs entre elles, et très bel équilibre malt/houblon. L’étiquette mentionne qu’il s’agit d’une «IPA style belge». Moi, je décrirais cette bière comme une triple bien plus houblonnée que ne le veut la tradition, et le résultat en est excellent!

Golden amber pour, half inch thick foam head. Yeast nose, mild clove. Taste adds grains, flowers, grass in addition to the clove. Body is light, prickly carbonation.

Dieu du Ciel, Montreal tap: Pours golden with a white head. Aroma is yeast and citrus. Taste is bitter and dry, but quite fruity. Plenty of floral aromas and tastes. Kind of spicy as well. Pretty good.

Another excellent brew from Dieu Du Ciel! It is a abbey style blonde ale but it could be categorized in its own style! Blond, foamy, effervescent, dry to the palate. Goes perfect with humus. ---Rated via Beer Buddy for iPhone

Tap at The Guild, Victoria. Estery, peppery nose. Fruity taste, medium to high carbonation. Fruity, slightly alcoholic in the finish. Pretty good.

Aroma is fruity and a bit funky. Tastes definitely like a Belgian IPA but not getting a lot of American citrus flavors. Aftertaste is a bit odd.

Pours a dark muddy brown orange pour with a small head. Nose is fruity and sweet. Taste is fruity and spicy, sweet without a bold yeast flavor. Drinkable and full of flavor. Finish is sweet and fruity as well, dry with moderate lingering and some yeast in the finish. Quaff Score 8 / 10
