Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Hazy blond body topped with a thick white foamy head. Strong sweet/fruity aroma (apple, banana) with hints of hops, herbs, grass, and coriander. Taste is dominated by hoppiness, and hides the alcohol pretty well. Has a nice bitter finish and pleasanr warming effet. Interesting...

12oz bottle...pours a cloudy, opaque golden yellow color with a thick white foamy head. Leaves nice lacing on the glass. Head is quite large then receeds to about a finger. nose is lovely, sweet but somewhat floral notes, a light ricey kind of graininess in the nose as well. Palate is full and thick with a very nice velvet/fluffyness about it, but not airy. fairly flat for the amount of bubbles that race through the beer. Flavor is grainy with some light sweetness but it really is quite dry. Some spiciness as well.

12oz bottle. Pours a bright gold and a big lacy head of tight white bubbles. Aroma is actually more like an APA or sweet IPA. The flavors have some elements of an abbey ale, sweet and mildly spiced but the hop character really cover it up. I’m kinda confused by this conflicting characters of this beer.

Cloudy golden color with a decent white head. Aroma is of fruit, light floral, yeast and spice. Taste is spicy, yeast, fruit, citrus.

Sweet yeasty aroma belies the dry, hoppy flavor. Aroma seems to have hints of dry starfruit. Flavor is less interesting than the aroma, as it often is.

nice beer, bottle Cafe Volo. cloudy orange color, with little chunks at the bottom, nose was hopy but also , slightly soapy, with some nice belgian spices, flowers as well.flavor is yeasty but sweet, but well balanced peaches , and honey. some hops on the finish and a great Belgian ale is what we have, probably one of the best Belgian style ales in North America

Pours a hazy gold color with a pillowy thick white head. Malty sweet candy aroma with a noble hop bitterness. Nice body, smooth malty with an explosion of bitter hop goodness in the taste. Nice use of the hops, really provides a compliment to the sweet malt and sugars. Very good.

Slightly hazed and tawny in color with a tall lingering frothy head. Superb lacing. Aromas of citrus and stonefruit nectar. Medium weight on the palate with excellent carbonation creating an expansion on the palate with a fluffy softness. Dry yet fruity with flavors of citrus and banana gum spice. A strict peachpit bittering component rips through every sip like a sword leaving a bitterness on the tongue. The finish is perfect. This beer is rich yet balanced.
