Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Bottle at Butters Cellar Blowout. Pours an eggshell color head with a golden body. Smells of yeast and a little homebrew. Flavor is yeast, dough, some banana and clove. Nice finish.

Bottle pours hazed orange yellow with a monster Belgian head and cobwebs of lace. The aroma is banana and peaches, yeast, spice, cloves, and some hops. The flavor is banana clove, coriander, with a bitter finish. The palate is pretty rich and somewhat still under all the foam. Overall, I like it well enough.

Very nearly clear apple juice with a lightly lacing short white4 head. Leafy and sweet with pears, apples, and peach with some cream and honey. Soap flavours could come with a little coriander spicing. Floral clean and toasty. European hop and malt is balanced nicely. Quite tastey but simple.

Volonteeeee EH. Spicey grassy belgian yeast aroma. Flavor is sweet pastures. What I imagine the cows grazing on during the finest summer day. A bevy of sweet floral and grass notes mixed together to create a truly enjoyable experience.

Very nice Beligan! Flavor smooth, yet complicated. Deep, yet simple. Pours golden with white head. Hoppy and effervescent. Very dry on finish, yet slightly sweet on taste.

Bottle poured into a snifter, big frosty white head... Light orange in color. Nice aroma of light grassy hops. Texture is smooth. Really easy to drink. Taste is light touch of hops, fruityness and some yeast/bread characteristics. Also some spices. On the dry side with a medium carbonation leve. Overall I am impressed.

Mmmmm - HMM!! Yessir, this is one FINE beer! Perhaps the best beer out of Canada I’ve had yet. Poured with a huge, foamy, frothy, fluffy, textured, off-white head that lasts forever and loads of lace. Color is a moderately hazy amber. Aroma is floral, a hint of minerals, hops, malt, spice, and grass. Flavor’s all a that and more. Dryish up front with hints of sweetness that come and go. Little honey in there too. Good burps. Great body and carbonation. Pick up a touch of alcohol in the very end. Could sip this beer on and on and on.

Pours a beautiful hazy peach-gold with a thick head that looks like beaten egg-whites. Aroma is full of promise - cloves, coriander, banana... yum. Oh god, Belgian blondes would ALL be immensely better if dry-hopped. This is totally the way to go! Wonderful crisp hop taste opens up into delicious malty sweetness perfectly balanced by lingering bitter hops, not grassy at all but lightly grapefruit-like. Notes of canned peaches. Alcohol warms the finish. Great creamy body, if a bit under-carbonated, but really quite nice. What a super treat - thanks to Robinvboyer for the trade!!!
