Pâle et limpide. Jaune paille avec une faible effervescence et un collet de mousse presque absent. Nez de Brett (assez fort en cuir), avec une touche de fruits tropicaux, de banane, de vinaigre balsamique et d’alcool. Flagrante acidité en bouche avec la douceur d’une banane bien mûre qui nous contente le palais pour calmer le jeu. On de devine quelques notes de chêne en finale, mais tout en subtilité. La bière est étonnamment mince et acqueuse en bouche, mais les saveurs sont tellement puissante que la présence est soutenue et l’illusion de rondeur est parfaite.

750ml bottle, bright clean golden color, with no head, with a light sour lemon juice, white wine tannin, mild funky, wild yeast nose, with some light sour pineapple, candied lemon, grapefruit peel, tart wheat malt mash accents, and a light yogurty lactobacillus sour, fruity, milky note in the aroma follows through on a medium-bodied palate with a mild sweet honeyed pear, pineapple fruit, light sour green apple, acidic lemony juice, bretty, wild, funky lacto yeasty character, with some subtle vanilla oak barrel, milkyish, sour yogurty, faint sour wheat, pale malt mash flavours, leading towards a bretty, funky, wild yeastiness, sour apple, pear, pineapple fruitiness, lingering acidic lemony, honeyed wheat malt, milkyish sourness finish.

Saveur: Léger goût de citron et de brett avec une pointe de chêne. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement onctueuse. Faible effervescence en bouche. My Bottom Line:
Tart lemons, wheat crackers and lactobacillus ride this Sour Ale’s soft prickling, building an engaging drinking experience.

Further Personal Perceptions:
-A ring of foam crowns the misty blond.
-All flavors are well balanced.
-The souring bacteria is more intense than I had expected, especially in the nose.
-Drinkability remains quite high.
-Greenness seals each sip alongside the sourness.

Aside from the lack of carbonation this was a lovely, bone dry white with the wine like characteristics at he forefront, but never dominating. Crisp, refreshing and lots of potential.

Deep golden color. Almost no head, very flat, funky sour nose with notes of cat pee, lemon. Lemon, oak, musty, mildly tart, very low carbonation, very low hops, slight burnt character in the finish. Very dry. Lingering oaky finish. Nice, but needs more carbonation. Enjoyable

Bottle at Tony/Jim BA Birthday Extravaganza 2013 (Western Springs, IL). Pours a frothy decent hazed golden darker hue. Nicer haze, mellow glow on the edges. Loose frothy whitish head dies to a ring, mellow lacing. Aromas are tart, crab apple, touches of lemon, oak, and gentle bretty funk. Some cobwebs, citrus, and mellow straw. Initial is mellow body, firmer pineapple, gentle tartness. Gentle citrus, firmer pineapple, touches of brett, yogurt. Gentle stuff. Middle is a touch sweet, firmly fruity and rich. Backend is a touch dry, tart and yogurty. Nice tartness, lemon, apple and pear. A touch sweet. Backend is a bit lactic, some lemo, decent to gentle tartness. Solid stuff, a bit vague, mellow, but tasty.

No head. Aroma is slightly sour-ish, light malts, white wine barrel, dried fruits, citrus peel, alcohol, grass, butterscotch, banana. Taste is slightly sour, light malts, white wine barrel, sorrel, citrus peel, grass, dried fruits, sour apples. Medium bitterness, slightly dry mouthfeel. Nice one.

I was actually terribly bored by this, the first beer I tried at The Festival 2013. Just a kind of generic lightly bretty clean wild ale with wisps of tartness but nothing super exciting going on. Certainly not bad, but I expected much more from DDC!.

Pouring at The Festival in Portland with Kramer, Andrew, and J-Dadmond. Pours a clear gold with a thin white head. Tons of funk and sweet acid. Very sweet, warm and funky. Sweet with light acid and tartness. Gentle acid.
