-Served with a meringue head atop hazy straw golden, admirable lacing will garnish the glass all the way down.
-Prominent coriander is perceived at first sniff in an otherwise fruity and humble approach.
-A superb balance of haystack dryness, fruity sweetness and grassy hoppiness luxuriously lasts.
-The creamy, nourishing mouthfeel evokes the overall wealth of the rye and barley maltiness.
What if you dig deeper?
-Hay and citrus are revealed in the aroma under the spicy sweetness.
-Sweet banana fruitiness aptly follows into supportive wooden back hop bitterness.
-Carbonation is active, and had to be to push along the scrumptious malts.
-Another expertly-crafted ale from DDC, exposing their obvious love for generous maltiness. Palate-licking good!

At the brewpub. A changeup of a saison, as the rye truly dominates, followed with some sourness, pepper, a drop of yeast, and above average carbonation. Lacey. Much better with food.

Appetizing foamy white head stays with us until the very last sip. The body shows golden, cloudy and moderately carbonated. Strikes me first as a pretty round example with generous fruity maltiness that appears even beefier with the rye influence that shows some of the spicy stickiness that was so envelopping in their corpus christi - must have been a mess to clean up the tanks. Back to business, citrus fruits and flower petals bathe aboard this estery pool. Growing grassy bitterness comes by spikes, making its way through the cutting spices. Finishing perfumey, aftershave-like and strong on the cerealic aspects. Full bodied, efficient carbonation reduces stickiness. Deserty. An healthy alternative to grandma’s lemon pie.

In short: Nice rye-based Saison. Unspectacular but very drinkable.

The look: Almost clear golden body with a long-lasting medium white head.
In long: Some coriander on the nose. Lots of yeast and lots of malts in this baby. Rye is apparent. Crusty rye bread is how I’d describe the malt profile. The beer felt a bit salty (some strain of Belgian yeast do that to me) and a little dusty which made each sip rather mouth drying. Fruity notes are limited a touch of apple/citrus juice in the back with maybe a hint of watermelon. As it warmed up notes of vanilla ice-cream started to come out. Sticks to the back of the mouth and make the beer feel stronger than it really is. Appropriate carbonation and mouthfeel. Nice beer that is only rarely brewed by Dieu Du Ciel. Makes me feel like a bored house-wife married to a football/baseball fanatic, I’m always looking forward for the Off-Season.

Very floral, citrus-lemon character to the sweet rye aroma. Hazy golden coloured body is topped by a very generous, pillowy, meringue-like, long lasting white head that laces the glass beautifully. Fresh sweet flavour focuses on the rye and malts but also offers some citrussy lemon flavours and a fair finishing bitterness that keeps it from becoming cloying. Medium body with lively carbonation that engages the tongue. Enjoyed on tap at the brewpub.

Cloudy blonde pour with a thin white head. Aroma of rye with banana esters and grassy hops. The flavor has the same eclectic elements with some citrus put in the mix and maybe clove. The body has a light to medium thickness with a comfy, creamy texture and moderate carbonation. Interesting, intriguing, well-done.

Tap at the brewpub. Very malty, light spice aroma, grains of paradise, rye. Chewy, muddled, not too saison-y. Flavor is dry and malty, kind of extract tasting, very husky, lots of wheat. Tastes more like an American Wheat. I didn’t know this was a rye saison when I was drinking it, I guess that’s perhaps why it doesn’t really come across as a saison at all.
