COMMERCIAL DESCRIPTION
This "Imperial Dark Saison" is a collaboration between DDC and Shiga Kogen. It has the grain bill of an Imperial Stout, hops grown at Shiga Kogen and is fermented with Saison yeast.

11.5 oz single bottle from the Craft Beer Cellar - Fort Collins. 0 and 3 are notched on the label so Im not sure of its age. Almost black in appearance with a big tan head. The aroma is moderately to heavily malty (roasted grain, bitter chocolate), light to moderately yeasty (black peppercorns) and lightly hoppy (citrus zest). Similar flavor, adding hints of earthiness and light coffee. Fairly bitter with a medium body and a lingering, light dry finish. Interesting.

An almost black beer, a head is big and light brown. Aroma has riped fruits, citrusfruits, some strawberries, liquirice. Also saison like spicyness and hint of mint. Interesting and great aroma. Taste has fruitness, spicyness, medium bitterness, roastiness, some liquirice in the end. Quite dry. Medium+ bodied, strong carbonation. Its difficult to say which style this beer is but thats not important because the great beer is in hte glass. Fruitness and roasted flavours.

11.5 ounce bottle into tulip glass, bottled on 9/10/2015. Pours pitch black color with a 2-3 finger fairly dense and fluffy tan head with great retention, that reduces to a nice cap that lingers. Nice dense foamy lacing clings around the glass, with a good amount of streaming carbonation retaining the head. Aromas of big raisin, fig, blackberry, date, pear, apple, apricot, orange zest, chocolate, cocoa, coffee, peppercorn, clove, licorice, toasted dark bread, char, herbal, and yeast/roasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, roast/bready malt, and citrus/earthy hop notes; with great strength. Taste of big raisin, fig, blackberry, date, pear, apple, apricot, orange zest, chocolate, cocoa, coffee, peppercorn, clove, licorice, toasted dark bread, char, herbal, and yeast/roasted earthiness. Good amount of roast/char bitterness and peppery yeast spiciness on the finish; with lingering notes of dark fruit, pear, apple, apricot, orange zest, peppercorn, clove, licorice, chocolate, cocoa, coffee, toasted dark bread, char, and yeast/roasted earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/spicy yeast, roast/bready malt, and citrus/earthy hop flavors; with a nice malt/bitter/spiciness balance and zero astringent flavors after the finish. Good amount of dryness from hop/roasted bitterness as well. Medium-high carbonation and medium-full bodied; with a very smooth, moderately creamy/bready, and sticky/chalky balanced mouthfeel that is nice. Alcohol is very well hidden with only a light warmth lingering after the finish. Overall this is an excellent imperial dark saison style! All around great complexity, robustness, and balance of fruity/spicy yeast, roast/bready malt, and citrus/earthy hop flavors; and very smooth and crisp to drink for the big ABV. A very enjoyable offering.

Deep brown body, three finger of lasting brown head. Aroma of toffee, dark fruits, spices, floral hops, yeasty notes. Flavour profile is completly different, lots of roasted malt, coffee, chocolate, dark caramel, Saison yeast, slightly sourish, alcohol fusel. Hoppy flavour is coming at the end. Long warm roasted malt and coffee finish. Lost of bitterness. Strong bitter coffee aftertaste. Full body, medium-low carbo. Waho. ---Rated via Beer Buddy for iPhone

12oz bottle pours black brown with big 3 finger brown head. Nose is earthy, damp soil, dark fruit, herbal spice, mint, pine, plum. Taste is more on the imperial stout side with big roasty bakers chocolate, ash, with a fruity grape plum background and a forest greenery herbal note. Finishes with ashy roast, wet earth, soil, piney, mint, dark fruit. A lot going on here.

Pours a very dark brown with a deep tan head with a reddish hue. Grassy, doughy nose with dark malt notes as well. Smooth, thick mouthfeel with some crispiness around the surface. Grassiness dominates. Which, is remarkable given the prominence of the dark malt expression.
