This "Imperial Dark Saison" is a collaboration between DDC and Shiga Kogen. It has the grain bill of an Imperial Stout, hops grown at Shiga Kogen and is fermented with Saison yeast.

Lastin brown head atop an opaque black body. Nose of soya sauce and yeast. Very bitter hops, burnt brown sugar. Very delicious. Purchased at Metro Liquor for around $4.50/355ml bottle.

Tap at DDC brewpub. Rich body, dark chocolate, raisin, licorice, roasted nuts, floral hops, hints of spice, dry finish. Complex, elegant and delicious creation, smoother than the Japanese version, the perfect definition of an imperial dark saison.

Very interesting beer, drinking out of the bottle. Roasted dark malts and chocolate are present along with the funky, spicy saison profile. I wasn’t sure this would work but it was pretty successful!

Pours an opaque black colour with a foamy, khaki head that lingers. Aroma is saison yeast, smokey malts, chocolate and espresso. Taste is similar to aroma with minor citrus and peppery notes as well. Mouthfeel is medium with prickly carbonation and a bitter, drying finish. Odd beer, but not bad.

Noire et opaque, cette bière aux multiples facettes se laisse dorloter par une mousse plutôt épaisse de couleur crème. En respirant à fond, une impression étrange mais agréable de tarte au citron et chocolat m’est venue à l’esprit. J’ai replongé mon nez plusieurs fois pour être certain et je n’ai pu chasser cette perception. Assurément un résultat de la combinaison entre la levure Saison fruitée et les grains légèrement torréfiés. On retrouve cette signature chocolatée et citronnée en bouche, les houblons utilisés dégageant des flaveurs fruitées qui sont sans équivoque. La texture est assez soyeuse et une amertume marquée s’amalgame à la finale un peu épicée de cette bière qui se veut un exemple parfait de l’alliage des styles. Une de mes bières favorites au Québec.

UPDATED: NOV 2, 2014 Pours black with a bit of tan head thah fades pretty quick. Nose is roasted grain, chocolate, booze-soaked cherries, some floral hops and some nice spicy funk from the saison yeast. Taste is lots of alcohol, roasted grain, sweet fruit and caramel, a bit of coffee and chocolate that lingers through the finish along with the floral hops. This is a really interesting mashup. Heavy, not sessionable but really damn good. November 2nd update: the above rating was on tap at the brewery. Bottle taste is very similar, though there seem to be less floral hops, and more cherry/plum notes in the aroma/taste. Either way my rating doesn’t change, and this is damn good stuff.

On tap at The Bishops Arms Bellmansgatan, Stockholm, april 17th 2014. Dark brown, close to black body with a big tanned head.  Sweet toffee and cocoa aroma with a zesty saison punch. Taste of coffee, plums, raisins, spicy yeast and a crisp fruity finish. Pretty thick body, medium bitterness.

Bottle at the Red Squirrel. Appearance - opaque black with a lovely fawn head. Nose - pineapple and light spice under a blanket of chocolate. Taste - again easy to pick out the tropical citrus and spice in amongst the chocolate. An edge of coffee too. Palate - medium to full bodied with a creamy texture and a long elegant finish. Overall - both stout and saison in the same glass and in balance.

From 341 ml bottle in tulip glass. Pour is black with a thick brown head. Aroma is coffee beans with a touch of vanilla. The belgian yeast is well present. The taste is even more coffee beans. This is followed by a boozy dark fruit, prune wave and all finishes with a long espresso taste. The saison character works well with the dark IPA character of this beer. High carbonation. Great mouthfeel. A great, complex beer!
