Head is initially average sized, frothy/creamy, brown, mostly lasting.
Body is black (non-opaque, flashlight tested).
Aroma is moderately malty (roasted grain, unsweetened chocolate), lightly hoppy (herbs), with notes of cherry, sour apple, clove.
Flavor is moderately to heavily sweet, lightly to moderately acidic, lightly to moderately bitter.
Finish is lightly to moderately sweet, lightly to moderately acidic, moderately to heavily bitter.
Medium to full body, watery/syrupy texture, lively/fizzy carbonation, moderately alcoholic.
Aroma is a somewhat disjointed mix of stuff, kind of like a dump bucket at a beer tasting, but not really unpleasant exactly, just unfocused and vague. It’s not much fun in the mouth either, being overly sour and bitter and having a kind of flabby and fizzy mouthfeel. Disappointing and mediocre at best.

C’est un peu de tout mais pas le meilleur du monde ...
ça se veut exhubérant dans un esprit très Québécois ( ce qui donne par aileurs des rucs très sympathiques ) Sauf que là, même si indépendemment, il y a des arômes intéresants; l’ensemble ne me semble pas très heureux.
J’y reviendrai peut-être ....

Pours quite dark with a dark tan head. The aroma has roast, chocolate, saison earthiness, anise and other dry spices. It has a medium / full body with a good amount of modest carbonation. The flavor begins with dry roast, cocoa, red fruits, earthy saison notes, dry herbs and light spicy hops. The finish has dry leaves, ripe apple, leafy herbs, some stone fruit and a bit of alcohol presence. Pretty good.

Black black with lovely pillowy creamy head. Aromas of citrus, barnyard, roast. Interesting flavours abound in this, from a sour kick to a bitter, puckering mouthfeel, to a roasty, toasty finish. But honestly this is just really hard to drink. And hard to enjoy.

Bottle 341ml kindly shared by Dominique. A dark beer with medium head. Nose is on dark malt, coffee and modern hops. Aroma is on roasted malt, mostly dry with low body, lot of yeast notes, unusual kind of stout, not really tasty.

Draught at Darby's. Very dark brown and good lacing. Roasted wood, tootsie roll, marshmallow, vanilla, cocoa nib, root. Taste is a punch of bitterness upfront, with a slightly balancing sweetness. Mouthfeel is creamy, and sticky. Very long, dry finish.

(341ml bottle from Dépanneur La Duchesse d’Aiguillon, shared by my great girlfriend) Pours a very dark brown, near black, with a moderate pale brown head that lingers a bit with spotty lace. Aroma of dark, fairly heavily roasted malts with wine poached pear, soy sauce, bit of toffee sweetness, citrus note, leather, a deep, subtle spice. On the palate, lots of pretty dry, dark roast malts form a base along with some toffee/caramel sweetness. Some black coffee, and more soy sauce. along with a tart fruity middle, smoky salty soy and roast on the finish with some dry hop bitterness for emphasis. Finishes bone dry and a bit ashy. Medium mouthfeel with somewhat high carb and just a hint of alcohol. Never particularly sweet for a dark Belgian and on the drier side for imperial stouts as well. A kind of strange, interesting beer. Kind of Japanese in character, with all of the soy notes and the nature of balance of different taste types. I might be interested in pairing it with good sushi, though I had it right after an amazing omasake meal of nigiri so my mind was biased.

Je suis désolé, je voulais vraiment aimer cette bière. C’est clairement une bière de très haute qualité, mais selon moi la combinaison ne marche pas. C’est très belle, noir foncé avec un col moyen marron, riche, très stable, et épais. L’arôme est du malt torréfié, les épices, un peu du chocolat et du houblon. En bouche, c’est une saison, un stout impériale et un IPA. Les saveurs se lutte contre l’un et l’autre et enfin l’amertume domine et supprime les autres saveurs.

Pours nearly solid black with only the faintest hint of colour around the margins, a fat finger of loose beige head diminishing gradually to a thin skim, moderate patchy lacing. (4/5) Nose is sweet dark malt, coffee, leather, citrus, soy?, faint smoke, some funk. (8/10) Taste is mild sweet, moderately strong bitter, some smoke. (8/10) Medium to full body, low carbonation and mildly warming bitter slightly funky finish. (4/5)
What. The. Hell. Is. THAT? Apparently, "Isseki Nichō” means “Two birds, one stone”, which I guess is a reference to this beer being a collaboration between DDC and Shiga Kogen (whom I had never heard of before today, but now seem to make necessary a trip to Japan so I can break my ass skiing in Shigakogen before sampling the local craft beers). Because, if it’s a reference to the style, it should be “Isseki Sanchō” (three birds, one stone) because I’ve never before seen “saison” applied to “imperial” or "dark”. I might be under-ranking this simply because it’s so utterly unlike anything I’ve tried before. I’m gonna think long and hard before I try the other one of these I have in my cellar. That being said, DDC is fast becoming one of my favourite breweries, not because everything they do is a home run, but because they’re willing to do these utterly unique variations. (16/20)
