Bottle at the DDC 10th Anniversary Party. The best lambic of theirs by far. The others were all pretty much garbage. This one was pretty nice. Completely still pour, very gold. Apple tart aroma, huge lactic acid, very cheesy. Puckering and lemony lime, sap. Very tart, with lots of natural flavors. No chemicals like the other versions. Dirty, sour flavor is very nice. Slightly acrid but the best by far. A sound effort that could do quite well with a bit more experimentation.

DDC. The best of the series, i think that was the general idea. Lemon tart citrus acidity. Lots of lacto and funkiness throughout. A decent lambik.

UPDATED: SEP 25, 2008 My Bottom Line:
Gratifying citrusy sourness streams into opulent funk before it veers back to a levelled acetic finish in this gallant P-Lambic.

Further Personal Perceptions:
-A thin ring of big-bubbled foam floats atop the cloudy pale yellow.
-This was the most drinkable of their 4 lambics imho, yet it remains intense.
-The still carbonation and omnipresent fruitiness make this as classy and approachable as white wine.
-The vinegary finish is pleasant, accompanied by some wooden dryness.

Bottle at the brewpub.

Hazy yellow pour with a thin white head. The aroma has green apple tartness, it has also a white wine quality and some farmhouse terroir. The flavor is very dry and acidic, there’s also a green apple feeling to it and that good old farmhouse terroir. Interesting, this is my favorite from the DDC lambics sampled at the 10th anniversary party.

375mL bottle @ DDC 10th Anniversary Party. Pours a hazy, pale golden color; thin, off-white head. Solid amounts of lemony funk, high acidity, and plenty of sweaty / farmhouse / musty notes; solid core aroma. Relaxed carbonation. Medium-to-full mouthfeel: herbal / medicinal notes, tart lemons and citrus, high levels of acidity; messy, mouthwatering lambic with plenty of citrus and acidity. Medium finish: lasting tartness; dry citrus, touches of toasty malts, and lots of funk.

Bottle at the brewpub for the 10th Anniversary party a few years ago. Pours a hazed cloudy golden with a thin head- fades. Aroma is acidic- lacto and big acetic vinegar, glacial almost, mineral slatey, cat piss, light fruity, white wine almost an unoaked chard fruit character and sauv blancish. Flavor is kinda stinky cheese, sharpness, dusty earthy brett funk, big sour, lactic, lemon, acetic and lemonlime, then more mineral slate, and limestone with a raw intense sourness mixing of a bit of lacto and a ton of acetic. Very sour- overly so, and it hurts the beer.
