Absinth is overwhelming, hazy amber, small off-white head. Totally tongue and mind blowing taste of absinth. Literally hard to swallow even the tiny portion I tried, reminds me of cheap perfume. Good to try new things, but this thing is not good.

A dark amber ale with a thin off white head. Light aroma of smooth spices, light wood esters, light cardamom...i can get a bit of the wormwood. In mouth, an intense taste of absinth and fennel, phenolics, very organic and oily, almost agressing. Interesting, but I wouldn’t drink a whole pint of this. Powerful.

On tap at the brewpub. Hazy yellow orange with a thin head. Aroma is aniseed, herbs and a bit of lavander. Flavor is aniseed herbs and a bit of malt, but this very soon get wiped out by a massive wall of bitterness from the absinthe. This is well done but a chore to drink.

on tap at DdC. colour is a cloudy golden with a thick white head. aroma is licoric, grass, anise, menthe, cloves and some hops. taste is spicy at first and then turns into the most unpleasantly bitter beer i think i’ve ever had. almost near undrinkable, like rubbing alcohol.

Tap at the Brewpub: The waitress warned me in her cute French accent "It’s very bitter, but not from the hops" I was like, yea, yea, just bring me the beer. But, wow, was she right! I thought being brewed with absinthe would make it sweet, but holy crap this is a weird beer. Pours a honey golden color with an off-white ring of head. The aroma is simple- all anisette, big, and sweet with licorice candy qualities. Then the flavor- starts with a sticky sweet anisette character, but then the bitterness, yikes! It tastes like straight minerals! Like tonic water with way too much quinine. Quinine indeed is what this stuff tastes like. Astringent, harsh and with no other discerning qualities. Definitely a unique (but non enjoyable) beer experience.

Had on tap (glass size) at DDC. Pours dark amber, with a good sized head. Aroma is strange, herbal, with odd grass notes. Flavor is absolutely hard to stomach. OK, to be fair, I didn’t know what to expect from an "Absinth" beer. But this did not work for me. It was sharp, overly spicy of herbs, black licorice, and inedible-plant-like astringency. I couldn’t get my head around this, and fortunately there wasn’t enough in my glass to allow me the abuse of further deliberation.

Bottle at the DDC 10th Anniversary Party. My goodness. Well, this beer smells awesome, that is for sure. Rich mint, fennel and rye, very unique and well met. The flavor is a ceremony of crisp rye bread up front, but fades into the harshest, single most bitter flavor I have ever experienced in my life. Damn near impossible to drink. After my second sip I gave up, I had little choice. I wanted to like this beer, the aroma was so nice and the flavor so promising at first, but forget it. I have no choice but to give this a terrible score as it is damn near undrinkable, regardless of its strengths.

Sampled at their last anniversary party, hazy gold hue, with an-off white head, intense nose of absinth and anise, licorice with a a nice menthol accent, with some hop, fennel leafiness notes, with a clover mintiness in the aroma follows through on a medium-bodied palate with a yeasty, anise, absinth character, with a subtle honeyish pale malt, with some menthol peppermint flavors, with a hint of blackpepper spiciness, with a good floral herbal fennel, sassafras, hop grassiness accent, leading towards a herbal fennel, leafy bitterness finish. My kind of beer, drunk till the end of the party.

Cloudy golden pour with a medium white head. The aroma has a strong herbal menthol presence with alcohol. The flavor also has herbs and menthol but what is the most striking is the very intense bitterness, it’s so bitter that it becomes undrinkable very fast.

On tap at D.D.C. The color is amber with a beige head. The aroma is of licorice and herbs. The taste is also in the same line but with malt added that gives it a nice sour taste. Bravo to D.D.C. they are not afraid to brew something ot of the ordinary.
