From tap at the brewpub. Pours hazy yellow with a small white head. Aroma is fruity and mild spiced yeasty. Peppery, yeasty and mild hoppy. Bitter and slight citrusy. Medium dry with a mellow yeasty note and mellow fruity finish.

A hazed blonde saison with a thin white head. A nice spiced malt in aroma, with light sulfury notes, talcum notes, powdery and smooth. In mouth, a delightful saison with smooth silky mouthfeel, spiced milkey malt, coriander, dry powder. On tap at DDC 12th Anniversary, Sept. 11 2010.

On tap at Mondiale 2011. Their 12th anniversary beer, brewed with peppercorn and yuzu rinds. Spicy and peppery but not as sweet and spicy interesting as I was prepped to believe. Higher than average mouthfeel Very lacey, hops bring it to the finish. Ok drinkability.

Tap at the brewpub. Very pale straw-coloured pour. The aroma is very light and spicy. Lots of soft minerally bitterness and a touch of lemongrass and white pepper. A little bit of soft bitterness along with a light floral character. Bone dry with a flinty minerality. Awesome really.

UPDATED: MAY 25, 2011 My Bottom Line:
Lime-like yuzu fruitiness, fruity Sancho pepper, doughy Saison yeast and citrusy wheat effortlessly move back and forth on the tongue, riding the effervescent bubbling and crunchy pils malt crackers into the levelled finish of spicy, herbal hop bitterness, green peppercorns and persistent yuzu rinds.

Further Personal Perceptions:
-A cap of foam floats atop the cloudy yellowish blond.
-The second batch wasn’t quite as successful I must say, being hazier in the flavor deployment and much less subtle in the yuzu department. 4.2 to 3.6.
-The body is relatively dry and quite quenching.
-All ingredients are matches made in heaven.

2011-09-24. Hazy pastel body, nice off-white head and lace. 3+ Flavour starts sweet, pale malt, quickly balanced by a sharp bitterness and spice character. Interesting sweet fruit notes in the middle, returns to a dry bitter spice that lingers in the finish and aftertaste, sort of peppery, light alcohol grows a touch as you go. 7+ Aroma is a melange of mild pale malt with muted toasty touches, sweetish fruit and dry spice, ephemeral floral touches that grow as it warms up. 7+ Flavour becomes less dry and more nuance as you go through the glass - an effect of the beer warming up, or your palate acclimatizing to it? Smooth average plus bodied palate is fairly effervescent. 3+ Solid saison. On tap at Volo, Toronto

On tap at Dieu du Ciel. Pours a clear gold with a thin white head. Crisp musk and bright citrus. Musky, lightly floral, bitter citrus rinds. A touch of sweet yuzu comes through beautifully. Clean citrus and peppery yeast. Very nice.

[3990-20110924] Tap. Spicy peach-smoked sage aroma. Slightly hazy, light orange body with a medium-lasting creamy white head. Spiced ginger cocktail flavour has a lingering spice. Medium body. Odd combination of things going on. (8/3/7/3/14) 3.5

Présence d’un moyen col mousseux et d’une fine dentelle sur le verre. Saveur: Goût d’houblons avec une pointe d’épices et de sucre. Durée moyenne de l’arrière goût.
