4 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20
12 oz bottle from Dave! Thanks brutha! Pour is gorgeous ... flavor is rich and big, nutty and sweet, malty and sticky. Srong but delicate, coating but not cloying....wrapped in a alcohol warmth. This has Rochefort written all over it .... and while it doesn’t quite reach the level of the 10, it does a darn good job. It def needs some more time though. Thanks buddy.

4.1 AROMA 8/10 APPEARANCE 4/5 TASTE 7/10 PALATE 5/5 OVERALL 17/20
11.5 oz bottle poured into a teku glass. The aroma is primarily that of dark, dried fruits - raisin and plum - with sweet, cooked cherries, grapes, and a warm spice. Undertones include a light earthy touch, mellow alcohol, and late, a honey note. It pours a deep, murky amber honey color with a soft, medium small suds, airy orange brown head that retains a nice layer, a medium ring, and leaves a touch of lace on the glass. The taste is amedium high, malty sweet with just a touch of light bitter. The beer is smooth and oily with an active, fizzy carbonation and a medium full fruit and malt body. Flavors of caramel, chocolate, and sweet dark fruits come through in abundance - grapes, cherry, plum, raisins - with a late nutty note. The finish is dry and zesty with a clean, refreshing clove character. There’s a mellow warm alcohol touch as well as some semi sweet dark chocolate. The aftertaste is a mellow dark chocolate note with clove cleanliness.

2.3 AROMA 6/10 APPEARANCE 3/5 TASTE 4/10 PALATE 1/5 OVERALL 9/20
11.5 oz bottle, poured into a snifter at approximately 40 degrees F.
Appearance: Pours a clearish yet dark ruby amber, which forms no head beyond a patchy cap and a ring of white. A few scattered streams of bubbles make their way steadily to the top of the beer.
Smell: Sweet toffee and caramel malt dominates the aroma, carrying a bit of candi sweetness along for the ride. There’s something akin to cranberry drifting through the scent as well.
Taste: Right up front, this is a barrage of caramel, toffee, and candi sugar, and that does not relent through most of the tasting process. The ABV is boldly present as both heat and astringency, providing something of a medicinal taste and a lingering burn on the tongue. Hints of chocolate and something vaguely fruity are present, but buried under the sweetness and alcohol bite. There is a pronounced peppery spice, however, which makes itself known alongside the alcohol.
Mouthfeel: Sharp and hot, this is creamy while in the mouth, and then leaves a sensation not unlike drinking sandpaper.
Overall: I’m uncertain if perhaps I got hold of a bad bottle, or if I’ve been spoiled by other large ABV beers that conceal their payload, but this would not be a repeater for me. I am generally a fan of sweeter beers, but the heat and medicinal tinge taint the whole flavor profile for me.

4.3 AROMA 9/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 18/20
UPDATED: FEB 16, 2015 2/9 - Monk’s Pub (Chicago) - Draft - This is my first quadruple and first Dieu de ciel offering, and it is one of my favorite beers of all time. I went from trying something new to enjoying four pours of an amazing beer. Very strong smell of coffee and fruity. The taste, however is very strong, malty beer. The beer feels heavy, great in the mouth, and goes down smooth. Rigor Mortis - definitely a beer to die for, and highly recommended from this beer lover. Cheers!
