COMMERCIAL DESCRIPTION
This noble brown winter beer with fiery reflections offers a complex aroma of fruit, alcohol and hops. Once tasted, it is slightly sweet with a hint of burnt caramel. Aged in American oak barrels, the bitterness has eased and it has wooden notes topped with a subtle touch of vanilla. A maderisation occurred after maturation in the barrel (aged one year), and the textures and flavors blend, becoming sweeter.

Copper pour with a small white head. Aroma of Oak, booze, candy, raisin. Candied fruit and booze up front, oak, vanilla, very slight bourbom, raisin, Fig, Toffee - lots going on here and age has mallowed the booze out in this one. Lower carbonation, very slight alcohol warming.

Bouteille 341ml. Embouteillée en novembre 2012. Couleur brune foncée, mousse beige foncée disparaissant rapidement en laissant un anneau. Arôme de malt, sucre d’orge, boisé, bourbon, figues séchées, cassonnade, noix? Goût de malt rôti, sucre d’orge, caramel, boisé, bourbon, légère amertume, chaleur d’alcool en fin de bouche. Carbonation faible, corps dense, collante et huileuse. Bière d’une belle complexité et ayant une buvabilité surprenante.

2009 vintage. Deep caramel pour with razor thin off white head. Nose of burnt toffee, vanilla, oak, dark fruit, and caramel. Taste follows the nose. Oak is more present in taste. Not hot in the least. Almost like a sessionable oak aged English BW which is a very dangerous thing for me. Easily the best thing I have ever had from Brasserie Dieu Du Ciel. ---Rated via Beer Buddy for iPhone

Bottle 341 ml. Big thanks to Tommy/Pat for sending me some of this. Dark brown pour. Big smell of booze and oak up front. The taste is vanilla, butterscotch, oak, with a smooth boozy finish. Had this on tap once before and recall the taste being different then this but I must say I like what I am tasting here its just not as bold as I remember it being. Great stuff.

Bouteille 341 ml. Arôme de vanille, de bourbon (wow!), de sucre, d’alcool et de fumée. Sucré en bouche (bon équilibre), l’alcool est bien tempéré. Texture ronde et onctueuse. Pas trop lourde pour le style. Du gros stock!

(On tap at the DDC tap takeover @ barVolo, Aug 23 2014 as Bourbon Barrel-Aged Solstice d’Hiver 2013) Pours murky medium brown with a tan ring of head, no lace. Aroma of bourbon, vanilla (oak), brown sugar, stewed plums, bitter hops. On the palate, toffee and glazed brown sugar, stewed dark fruit, bourbon, pine bittering hops, booze on the finish. Full body, soft carb. Lovely aged barley wine with barrel highlights, rich and smooth. Would love to have it on its own in the winter, rather than at the tail end of a long day of summer beer.

Aroma: Crystallized fruits, Cherry, red licorice, bourbon and caramel. Nose sticking out well. Very candy. typical of style. Appearance: Dark brown with average creamy head going down fast. Not a lot of lacing. Taste: Attack is very sweet, very candy. A lot of fruit, cherry, field berries. Finish is showing fresh and grassy hops. Also found notes of burnt caramel. Bourbon is wrapping all flavors, giving strength and power. A balanced beer, tasting sweet syrup but with a more hoppy finish than regular barley wine.

Bottle, aged 18 months. Dark brown pour, beige head. Oaky aroma, dried fruits, vanilla, light citrus. Some boozy heat in the taste, dried fruits and bourbon notes, a touch of citrus. Full bodied with a dry finish. Very nice.

Best Barley Wine ever for me ! Amazing balance, much smoother than the regular version, especially when it comes to the bitterness, well shattered by the barrel aging. Complex flavors and very easy to drink. Marvellous, at least...

Une effervescence moyenne émane du liquide peu mousseux à la pigmentation brune et acajou. Très séduisante au nez, la Solstice d’Hiver Réserve Spéciale dégage des notes boisées, de caramel brûlé, de dattes et d’alcool fort. Ça promet! En bouche, quelle rondeur! Le taux d’alcool élevé enveloppe des traces de chêne et de fruits confits et l’aspect sucré de ce vin d’orge s’étire longuement dans une douce finale amère. Un tourbillon de saveurs wow!
