COMMERCIAL DESCRIPTION
This noble brown winter beer with fiery reflections offers a complex aroma of fruit, alcohol and hops. Once tasted, it is slightly sweet with a hint of burnt caramel. Aged in American oak barrels, the bitterness has eased and it has wooden notes topped with a subtle touch of vanilla. A maderisation occurred after maturation in the barrel (aged one year), and the textures and flavors blend, becoming sweeter.

2014-08-23. Dark brown body with a nice tan head. 4+ Aroma is pleasantly malty, lots of vanilla up front over a sweet malt core has lovely sugar and caramel accents. 7++ Flavour is similarly sweet malty core and has lovely sweet sugar, caramel and toasty malt notes. Bourbon/vanilla goes from dominant at first to a perfect partner to the rich malt base as the glass goes. Smooth medium bodied palate, soft carbonation. 3++ Lovely and rich. It’s a bit over the top for today but is lovely nonetheless. On tap as Bourbon Barrel Aged Solstice D’Hiver 2013 at DDC Tap Takeover Event, Volo, Toronto

(On tap at the DDC tap takeover @ barVolo, Aug 23 2014 as Bourbon Barrel-Aged Solstice d’Hiver 2013) Pours murky medium brown with a tan ring of head, no lace. Aroma of bourbon, vanilla (oak), brown sugar, stewed plums, bitter hops. On the palate, toffee and glazed brown sugar, stewed dark fruit, bourbon, pine bittering hops, booze on the finish. Full body, soft carb. Lovely aged barley wine with barrel highlights, rich and smooth. Would love to have it on its own in the winter, rather than at the tail end of a long day of summer beer.

The gold sticker on my bottle actually says 2013 en fût de bourbon, but I see others have rated it here too, so here goes... Dark brown with golden highlights and a surprisingly lively sponge-toffee head. Very strong bourbon on the nose, oaky vanilla, maple, brown sugar. The base beer can handle the big bourbon influence here, and the marriage is a happy one! Very warming finish. Very nicely done.

Bottle at Ryan’s hotel room after EBF’s Night of the Barrels. Pours a hazy brown with a thin white head. Boozy right up front with some vanilla and sweet caramel. Malty, more vanilla and chocolate. Finishes with a bit more warming alcohol and some more thick caramel. Pretty tasty now, but I can imagine this one developing a bit more.

(12oz bottle) Pours a cloudy mahogany body with a small cream head. Aroma of wood, caramel, raisins, dates, and vanilla. Flavor of caramel, wood, maple, raisins, brown sugar, figs, chocolate, herbs, and vanilla with a dry finish. Tasty!

Bottle. Dark copper with a fair head for a BW. Appears very viscous as it pours which makes the head surprising. Big boozy brown sugar, rum and molasses aroma. Big sugary boozy body makes me think of caramel or toffee liquere and ice cream. Hints of soy.

12oz bottle, thanks Tom! Dark caramel, clear with a uniform tight khaki head...perfect. Super rich nose, caramel, raisin, plum, brown sugar, tons of booze...god damn! Medium to medium heavy with very prickly carb. Rich bourbon booze with vanilla, maple, prune, fig...boozy and rich.

Courtesy of after4ever. Thanks Tom. Pours amber with some haze and thin off white head. The aroma is smooth oak, vanilla, sweet dark fruitiness and mild bourbon boozy heat. The taste is nice and sweet with rich dark fruitiness quickly moving seamlessly into vanilla, oak, bourbon and chocolate. Tasty stuff.

A: The pour is a dark amber color with a pronounced turbidity and a small and short lived khaki head. S: Big time bourbon and oak aromas. Sweet vanilla, caramel, and toffee all the way through with a little bit of brown sugar and maple syrup. Bread and sweet dark fruits round the bouquet out. T: Tons of sweet maple syrup flavor along with caramel and toffee. Sweet vanilla and bourbon flavor with only a mild oak flavor. Some of the dark fruits are there as well. M: Medium in body with a smooth, medium body. O: I thought the regular version of this was decent, but not great. This however, was outstanding.
