This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

11.5oz bottle. deep, dark orangey-amber colored body, very short, thin foamy light sienna head that goes quickly. aroma is sweet and vinuous malt, toffee, raisins in bourbon, and a little woody. flavor is sweet and strong toffee malt, a little bourbon and sweet vermouth, some light heat and light bitter hop, and dark dried fruits like prunes. a little estery in the finish, and some bitter hop in the aftertaste. nice balance and profile, enjoyable.

Sample@SBWF2015. Cigarr, choklad, russin och bär kan urskiljas i doften. Torkad frukt, mörka bär, cigarr och mörk bitter choklad i smaken. Avslutas med en lätt lakritston Lite klen i humlen, om jag skall klaga på något. Lång eftersmak.

Murky brown with a tan head. Aroma is raisins, dates, chocolate, caramel. Full bodied, slightly sticky mouthfeel, sweet and fruity on the palate with a warming finish. Taste is raisins, chocolate, dates, brown sugar, booze.

Pours a hazy amber-brown. Has a faint sweet malt and dark fruit aroma. A delayed taste of dark dried fruits, caramel, spices, and malts. Leaves a very dry aftertaste. Flavor was weak as I had it at a Xmas in July event.

341 ml bottle. Pours a hazy, brownish red with a creamy, medium, long lived, tan head that laces. Sweet malty aroma of caramel, dark fruit, berries and light spice. Sweet flavour of roasted malt, caramel, dried fruit, light spice with warming alcohol and a dry, bitter hoppy finish. Full body with a thick, oily texture and soft carbonation. Very nice.

Pours brown with a creamy off-white head that lingers long. Nose is slighty yeasty with strong tart candy notes. Taste is on the bitter side with a bold malty undercurrent. Full-bodied beast; thick and creamy. Very tasty brew.

Bottle sampled at ZEBF ’15. Pours cloudy brown with a ring tan head. Aroma of overripe dark fruits, raisins, light chlorine, caramel, toffee and a strange herbal touch. Flavour is over moderate sweet and bitter. Over medium bodied with soft carbonation.

Bottle. Pours a dark reddish brown with a thin tan head. Some sediment. Aroma is significant; a sweet toasted maltiness. Taste is malty/hoppy - caramel sweetness with a floral earthy bitterness. Thick mouthfeel, very full bodies, but not syrupy at all. Finish is an earthy bitterness with a slight sweetness that changes to a spruce like crispness. Very complex. A fine example of a barleywine!
