COMMERCIAL DESCRIPTION
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice díHiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

12 oz bottle, Andersons, $5.49(!). Pours raisin-colored with a very light tan head that at first appears as if itís going to fizzle out but ends up becoming full and creamy with serious staying power. Aroma prune or raisin, burned caramel, booze, alcohol, dust, compost. Flavor is dark, super sweet, earthy, wood, maybe a hint of tobacco. Finish is overly sharp bitter; based on the commercial timeline this beer has been aged for a year as I drink this, and itís not long enough. Medium-thick body is frothy in the mouth; heavily carbonated, quite sticky. I want to love this but the bitter kills it for me; otherwise this would be really great.

Pours a hazy amber-brown. Has a faint sweet malt and dark fruit aroma. A delayed taste of dark dried fruits, caramel, spices, and malts. Leaves a very dry aftertaste. Flavor was weak as I had it at a Xmas in July event.

341 ml bottle. Pours a hazy, brownish red with a creamy, medium, long lived, tan head that laces. Sweet malty aroma of caramel, dark fruit, berries and light spice. Sweet flavour of roasted malt, caramel, dried fruit, light spice with warming alcohol and a dry, bitter hoppy finish. Full body with a thick, oily texture and soft carbonation. Very nice.

Pours brown with a creamy off-white head that lingers long. Nose is slighty yeasty with strong tart candy notes. Taste is on the bitter side with a bold malty undercurrent. Full-bodied beast; thick and creamy. Very tasty brew.

Bottle sampled at ZEBF í15. Pours cloudy brown with a ring tan head. Aroma of overripe dark fruits, raisins, light chlorine, caramel, toffee and a strange herbal touch. Flavour is over moderate sweet and bitter. Over medium bodied with soft carbonation.

Bottle. Pours a dark reddish brown with a thin tan head. Some sediment. Aroma is significant; a sweet toasted maltiness. Taste is malty/hoppy - caramel sweetness with a floral earthy bitterness. Thick mouthfeel, very full bodies, but not syrupy at all. Finish is an earthy bitterness with a slight sweetness that changes to a spruce like crispness. Very complex. A fine example of a barleywine!

12oz bottle pours dark reb brown with light edges and 2 finger head. Nose has dark fruits, caramel, fig, raisin, maple. Taste has very soft creamy mouthfeel, lots of big dark fruits, bread crust, fig, plum, bitter, semi sweet. Finishes moderately sweet, medium-high bitterness, toasted bread crust, caramel dark fruit, raisin, sticky. Nice barleywine.

Bottle thanks to slovaksniper. Pours nearly flat with just a few bubbles. somewhat hazy deep reddish color. Nose is full of caramel malts and starting to turn to dried fruits. Taste is moderately sweet, but at the same time well balanced. Light grassy flavors, with some alcohol becoming obvious in the chest after a couple sips. Remains bitter in every sip, and starts to become a booze bomb after many more sips. overall, very nice, but could use some rounding out to become more palatable.

Old rating. Pretty mahogany color. Rich, sweet barley wine with oak characteristics, caramel, and dark fruits. Slight hop bitterness. Full bodied.
