This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Beautiful mahogany color with creamy head. The aroma is simpler than expected, some caramel and malt, but also some ripe apple, which is not a good sign; nutty too eventually. Full bodied, round mouthfeel; more caramel than malt, with some fudge and light treacle, medium sweet; very strong bitterness, with some bitter oranges and some hop resins.
Midway between English and American Barley Wines. Body and texture are excellent, more depth was expected from the malt.

Dark color, with creamy head. Moderate aroma of caramel and dark malts. The mouthfeel is round and very smooth, the malt flavor is nice, not sticky, with caramel and light fudge and treacle note; it has a hint of spices, and the bitterness level is correct; the liquorice starts to appear, pale sign of age; some nuts play in the final.
Very good, probably still interesting for another 2-3 years.

Cloudy chestnut color; compact head. The aroma is not much expressive, light hop and caramel. It has a good body strength, with strong caramel and chocolate flavor, and a very powerful hopping, very aromatic; the chocolate is rising at the end. Pleasant, but powerful without soul.

2007-09-22, draught at Stockholm Beer Festival 2007, 6-4-7-3-13=33
Very dark color, with bright amber shades; thin head, creamy. Alcoholic aroma, light red berries. Round mouthfeel, very warming, some malt and caramel flavor, sweet; quite high bitterness. Well brewed, but without emotions.
