COMMERCIAL DESCRIPTION
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Bottle: Pours a murky brown hue, with a sticky, slow fading head. A decent amount of sediment, even though it has been upright for more than a month. Aromas of a touch of caramel, a nice hoppy pine note, and little herbal. Mouth feel is medium to full bodied with an initial sweetness that quickly fades. Flavors of oak, a touch of spices , and some toast. Interesting.

Pours brown with a creamy off-white head that lingers long. Nose is slighty yeasty with strong tart candy notes. Taste is on the bitter side with a bold malty undercurrent. Full-bodied beast; thick and creamy. Very tasty brew.

Bottle sampled at ZEBF ’15. Pours cloudy brown with a ring tan head. Aroma of overripe dark fruits, raisins, light chlorine, caramel, toffee and a strange herbal touch. Flavour is over moderate sweet and bitter. Over medium bodied with soft carbonation.

Bottle. Pours a dark reddish brown with a thin tan head. Some sediment. Aroma is significant; a sweet toasted maltiness. Taste is malty/hoppy - caramel sweetness with a floral earthy bitterness. Thick mouthfeel, very full bodies, but not syrupy at all. Finish is an earthy bitterness with a slight sweetness that changes to a spruce like crispness. Very complex. A fine example of a barleywine!

12oz bottle pours dark reb brown with light edges and 2 finger head. Nose has dark fruits, caramel, fig, raisin, maple. Taste has very soft creamy mouthfeel, lots of big dark fruits, bread crust, fig, plum, bitter, semi sweet. Finishes moderately sweet, medium-high bitterness, toasted bread crust, caramel dark fruit, raisin, sticky. Nice barleywine.

Bottle thanks to slovaksniper. Pours nearly flat with just a few bubbles. somewhat hazy deep reddish color. Nose is full of caramel malts and starting to turn to dried fruits. Taste is moderately sweet, but at the same time well balanced. Light grassy flavors, with some alcohol becoming obvious in the chest after a couple sips. Remains bitter in every sip, and starts to become a booze bomb after many more sips. overall, very nice, but could use some rounding out to become more palatable.

Dark copper red pour with small off white head. Aroma of caramel, malt, hops and fruit. Taste of burnt caramel, hops, brown sugar, apricot, lychee and yeast. Full bodied, medium carbonation, creamy mouthfeel. A touch too sweet but delicious nonetheless.

2013 bottle. Pours dark brown with ruby translucency and small tan head. Aroma of roasted caramel and hops. Taste is similar; rich caramel, hoppy bitterness but also some cereal poking through. As the brew warms I can taste an almost doughy aspect. Really nice.
