COMMERCIAL DESCRIPTION
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice díHiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Dark brown beer with hardly any carbonation or head. Hardly any aroma. Strong taste of dark burned malts, some caramel and a lot of alcohol. Herbal, spicy but all ruined by the overwhelming alcohol warmth making it very unbalanced.

341ml bottle. Murky chestnut colour with a thin foamy beige head. Flavors are dates, raisins, dried fruits, licorice, brown sugar, burnt caramel, toasted bread, pine resin and alcohol with earthy notes. Full body, moderate carbonation, sticky texture.

Strong roasty aroma. The flavor has plenty of booze, roasted malt and burnt caramel, but Iím not getting any "red fruit". Pretty bitter. Much better and more interesting than a traditional barleywine. Note to brewers: barleywines are vastly improved when they have some roasted/burnt/smoked flavors.

Brown pour with red hi lights. Aroma is dark fruits, lightly roasted French press coffee, toffee. Flavour has toffee, sticky fruits, burnt caramel. Finish is burnt, boozy and bitter. Great take on a barley wine style.

Bottle from South Bay Drugs: The initial aroma has an almost tangy citrus scent of lime or some other sour fruit with addition of caramel like malts and honey roasted macadamia nut. Appearance is a light shade of brown but contains heavy amounts of sediment resting throughout the liquid in equilibrium while a thin layer of head will dissolve quickly. The drink is heavy with high alcohol content and heat, but as far as flavor there is a pleasant sweetness attributed to the malts in a sticky caramel apple taste.

THX to Kraddel! 341 ml. bottle sampled @ Barley Legal Tasting Room. Pours dark brown with a sizeable head. Nose is thick raisins, dark bread, sweet brown sugar, gravy, faintly vinous. Tastes very Belgian, touch bitter, sour gravy, dark red grapes, raisins, coffee grounds, herbal, dark bread, thick malts. Overall largely bland and quit sweet. Touch syrupy malty body. The bottle may say barley wine but this really tastes like a middling Belgian strong ale to me. Nothing bad but nothing exciting either. The label is cool. I still feel like every time a Canadian or USA brewery makes something middling or acceptable Belgian-style the North-American beer geeks insist on over-hyping it like it is the best thing ever. It is a bit ridiculous.
