COMMERCIAL DESCRIPTION
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Pours a clear dark brown with a thin, creamy beige head. Aroma is pretty weak for a big barleywine but it hits lots of the right notes: toffee, caramel, light fruity notes and malt sweetness. Flavor is big on caramel, toffee, nuts, toast and planty hops up front, some more mellow notes follow with toasted wood, apple skins, earth and some spicy, somewhat floral hops. Heavy and chewy in body with a light, blanketing and a little sharp carbonation. Pretty good overall, the weakness of the aroma holds it back a bit for me. Although I wouldn’t call this an especially hoppy barleywine it has a very nice fairly strong hop profile.

On tap at Global Brew. Pours a dark garnet with a thin light tan head. Mild, ill-defined aroma. Taste is rich roasted malt, sweet caramel, buttered biscuits and an assertive bitterness.

Aroma - spruce hops, alcohol, caramelized sugars, and dark fruit. Appearance - the body is a hazy burnt umber. The head is small about 1/4" beige head. Some alcohol cloying. Taste - rich caramelized sugars, honey, raisins, alcohol, and some piney hops underneath. Palate - full body, slick feel, average carbonation, lively texture, the finish some hop bitterness and alcohol astringency.

Le nez est assez faible pour une barley wine ! Un fond malté, de la levure, un léger, très léger houblon. Presque une impression de lager. La bouche est très déséquilibrée et pas si agréable : l’alcool se ressent déjà plus, on sent un caramel légèrement fumé un rien éc?urant. Mais surtout, le houblonnage est très franc et donne une finale très amère. Ne pas cracher dans la soupe : cela reste une bonne bière de caractère mais point de vue style, pas franchement un top.

341 ml. bottle. Hazy brown ruby color, light head. Aromas of smoke, brown sugars and caramel malts. Taste is strong barley, brown sugar with a little bitter aftertaste. Alcohol is very present and the mouthfeel is heavy. Perfect for a cold day. cheers!

Sampled from an 11.5 oz brown bottle this beer poured a murky brown color with orange highlights and a medium sized creamy beige head that left good lacing. The aroma was molasses, toffee, fig, cherry, raisin and had a faint vague presence of herbs and spices. The flavor was sweet cherry and fig followed by a strong medicinal note then molasses, anise and booze. Long medicinal finish that grew with each sip. Moderately full bodied but a tad flat. Quite disappointing.

Le nez, superbement complexe et équilibré, laisse présager une très grande bière. Malheureusement, en bouche, l’amertume est beaucoup trop présente, au point de venir masquer les arômes. Manque d’équilibre. Impression de gâchis.

Clear mahogany color with light brown head. Aroma is very floral, makes me think of white roses. I can’t tell if it’s from the yeast or the hops. Taste is also floral and yeasty at first with some caramel notes but gets bitter and roasty on the finish. Lingers bitter and perfumey in the aftertaste. Body and carbonation are medium. Very fragrant barleywine. Also quite bitter, making it easy to drink.
