COMMERCIAL DESCRIPTION
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Aroma of toffee. Taste of toffee and hints of chocolate. A little different barley wine. A little bitter. Maybe it needs aging.

Dark copper red pour with small off white head. Aroma of caramel, malt, hops and fruit. Taste of burnt caramel, hops, brown sugar, apricot, lychee and yeast. Full bodied, medium carbonation, creamy mouthfeel. A touch too sweet but delicious nonetheless.

2013 bottle. Pours dark brown with ruby translucency and small tan head. Aroma of roasted caramel and hops. Taste is similar; rich caramel, hoppy bitterness but also some cereal poking through. As the brew warms I can taste an almost doughy aspect. Really nice.

A louverture de la bouteille sa.sens le houblon resineu, lalcool et le metal. Une belle biere nuageuse foncée rougeatre. Un tres beau col qui senfui et laisse une fine dentelle qui reste. Aspect assez liquoreux. Arome sucré de sucre dorge. Coulis de fraise. En bouche , lamertume du houblon et du malt est dominante. Cette chaleur dalcool se lrolonge longtemps.en finale et est portée par une effervescence assez elevée.Le corps est onctueux et tres plaisant au palais. Une amertume puissante transforme cette riche barleywine en quelquechose de bien original. Jai vraiment apprécié

A slightly thick pour with light sediment from the bottle to a pint glass. The beer had a deep mahogany-brown color blend with a small foamy off-white head that had short retention and lighter cling and lacing. The aroma featured a blend of roasty caramel, sugar, and dark fruit tones mixed with some earthy and grainy hops with a bit of bourbon and some yeast. The taste had a deep powerful taste of sweet dark fruits and sugar, that quickly gave way to a super strong bitter character with a hefty presence of alcohol. It was a well-carbonated beer with a very filling, thick mouthfeel and quite dry. Seems to be a well brewed beer, but somewhat intense for my taste.

From bottle. Pours dark with a small off-white head and a slight lacing. Aroma and taste of dark fruits. Taste is nicely sweet for a barleywine, rich and delicious. No obvious hops. Full and creamy mouithfeel.

Delicious. The barrel is definitely the star of the show here, but the base barelywine is strong enough to push its way through and play a role as well. Though it might be a touch light in the body, it is definitely creamy and smooth enough, with lots of character and complexity worth pondering. Thanks again peensteen. Highly recommended.

courtesy of Jaghana. Couleur brune sombre, reflets ambrés, mousse qui disparait. Nez fort malté, caramel cuit, orge, note reglisse, boisé chêne. Gout caramel un peu grillé, malt d’orge, cassonnade, fruits noirs (figues), petite amertume houblonnée. Corps liquoreux. Fin intense caramel grillé, douce et amère. Superbe!

Robe d’un brun ambrée presque opaque. On a déjà l’impression que le liquise sera soyeux et liquoreux. Arômes d’anis, caramel et houblon. Une touche de café et chocolat noir se fait auusi sentir. En bouche, les saveurs amères prennent déjà beaucoup de place. Café, mélasse, pamplemousse et anis. Finale qui s’érire longuement sur les effluves amères où les saveurs plus sucrées de chocolat noir tentent de prendre leur place. Le corps est plutôt léger et il y a une belle carbonation. Excellent BW, où l’équilibre entre houblons et sucre est superbe.

Bottle. Deep opaque brown body, thin-medium off-white head. Rich nose with lots of fig, raisin, prune and toffee; caramel; hints of alcohol. Sweet with some burnt notes and light oxidation. Body begins with sherry, fig, and prune, starting sweet and chewy, followed by slight oxidation and a big bitter boozy punch. Better balance at warmer temperatures. A rich, tasty, malty barleywine.
