COMMERCIAL DESCRIPTION
A blend of Cherry sour beer with a 3 types of Brettanomyces fermented beer, together aged 2 years in oak barrel. Very limited quantity of 200 litres.

Verre de dégustation, provenant d’un fût, dégusté à La Soirée des Brasseurs 2012 (Shawinigan, QC). Arôme: Odeur de cerises avec une pointe boisée. Apparence: La couleur est rouge avec une très faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de cerises sûrettes avec une pointe de brett et de chêne. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Moyenne effervescence en bouche. Présence de cerises sûrettes en arrière goût. (Rating #4474)

Slight hazy reddish hue, with a white-pinkyish head, nice sour cherry, sour raspberry fruity nose, with a tart, acidic, lactic yogurt-ish funky bretty yeastiness accent, with a sour wheat maltiness note in the aroma follows through on a medium-bodied palate with a good, tart, acidic, sour raspberry, cherry, faint vanilla, bourbonish wood oaky barrel character, with a dusty, subtle lactobacillus, lactic sourness flavour, reminiscent of La solstice d’été aux framboises, leading towards an acidic, sour, tart, raspberry, cherry fruitiness, lingering vanilla, bourbon barrel red berry sharpness finish.

In short: A very tart and moderately sour wild beer bursting with cherries and more… As tasty as it is refreshing and easy to drink. Splendid
How: Tap at brewpub, this rating for a very fresh drank on the week of the beer was first released. Also comments on a glass a few months later at anniversary party
The look: Cloudy amber-red body topped by a small beige head
In long: Nose is very bright, bursting with fresh cherries, pedio/bretty wild character, lactic acid. Taste offers also plenty of fresh tart cherries but also raspberries, other fruits of the berries family, some ruby red grapefruits, medium funk, medium sourness, strong refreshing tartness, crisp wheat-like cereals. Full body that is very crisp and somehow feels relatively light. Very refreshing even if quite tasty, highly drinkable even if quite tart and moderately sour. This is a kick-ass beer. A few months later the beer was a bit more bretty-wild, was a little less tart and had lost some of its crisp brightness. I slightly preferred it when very fresh. Strange how DDC’s Symbiose beers don’t seem to age well, the No.1 was just a messy shadow of itself when 6 months of age. Wow, I really loved that beer, but my friends appeared to be shocked when they saw me kissing and making out with this pint of beer in the pub, probably because they know I’m married.

En fût au 14e anniversaire de DDC. Couleur rouge, rosé translucide, peu de mousse, léger anneau sur les parrois du verre. Arôme de cerise, de fleur, un peu vineux, avec un côté funky. Goût de cerise sûre, un peu boisé, belle acidité. Carbonation faible, un peu huileuse. Brett pourraient être plus présentes.

On tap at the Dieu du Ciel 14th anniversary party, pours a dark amber / ruby red with a small beige head. Aroma of berries, red wine and some light tart notes. Flavour of sour berries and tart oak barrels. Very complex, with the complexity largely coming in from the sour berries I think. Highly drinkable and quite delicious.

Verre de 12 oz, à la brasserie de Montréal. Arômes vineux et boisés, beaucoup de cerises et contribution rustique des brettanomyces. Robe rubis et limpide, effervescence moyenne et légère dentelle rose. En bouche, les cerises sûres sont à l’avant-plan, mais les brettanomyces et le fût de chêne contribuent également au profil de saveurs. Finale relativement sèche montrant une belle acidité citrique et lactique. Une belle bière sûre, relativement intense, mais qui demeure facile à boire.

My Bottom Line :
This super drinkable creation showcases sour cherries and brettanomyces alongside floral and citrusy intricacies.

Further Personal Perceptions :
-A veil of foam tops the pinkish red.
-This is obviously a blend geared towards drinkability and summer terraces.
-The barrels share but a few wooden notes in the flavor profile.
-You can almost imagine hibiscus juice being part of the flavors here...

On tap. Appearance: Deep red, darker than solstice d’été aux framboises, purple highlights. Aroma: Definite presence of brettamonyces and other bugs, seashells. Aged fruits, feels like cherry skin and grapes. Flavor: Mostly cherries, high sourness is balanced by caramel and wood sweetness. Bretts are light. Full bodied and lively carbonation. Overall: A well executed sour but I preferred the first one.
