On tap at the brewpub, mahogany-brownish color, with some reddish highlights, with a white head, with a kind of cherryish fruity, morel mushrooms nose, with a hint of wildberry fruitiness, some earthy malts, bready dough, with also some spiciness in the aroma follows through on a medium-bodied palate with a yeasty, raw graininess, and toasted malt character, with a hint of fruity cherry kirch liquor , a biscuity accent, and earthy morel mushroom note, with a faint floral hop, subtle spiciness, leading towards a malty grainy finish.

dark cloudy brown. nose is of dirt, and a pleasant mushroom must. flavour is slightly bitter but the mushroom fungus flavour really comes through. Very interesting. Big points for creativity!

Clear copper poor with a beige head. Aromas of oak, sauted mushrooms and pepper. Good balance, nicely effervescent with a dry finish. Flavors of cranberries, morel mushrooms and hints of caramel.

On tap at Mondial de la Bière (Montréal). Nice copper/brown body with a decent beige foamy head. Well balanced malty aroma with nutty notes. Taste carries the same nuttyness as the aroma. Ends with an enjoyable bittersweet finish. Well done.

My Bottom Line:
Morel mushrooms lace the nutty brown ale base, as a peppery earthiness rounds off the back end. This is another Dieu du Ciel creation which showcases the brewer’s extraordinary talent at integrating exotic ingredients to a very good base beer and making all ingredients shine equally and in unison.
Further Personal Perceptions:
-A sheet of foam protects the brown gown.
-Maltiness, as is usual for DDC, is creamy and superbly developed.
-A sweetish candy character seeps into the nuttiness.
-This would be just the perfect accompaniment to a great steak. Some of it reduced into a coulis, and then a pint of it on the side. Mmmmm.

Bu au Mondial 07. Brune peu foncée, moyen collet. Arome de malte chocolaté, d’herbage et ce champignon là, des morilles. Goût crèmeux de légume verte et de morilles. C’est à s’habituer, mais c’est original.
