COMMERCIAL DESCRIPTION
ABV 7.1% 16 IBU's. A swanky interpretation of a double strength wheat beer, fermented solely by champagne yeast. Notes of tart citrus and white grape soothe the pallet in this sparkling ale.

UPDATED: JAN 22, 2010 On tap at the brewpub. FYI: the late 09-10 batch was tinkered with so it’s different from previous batches. Served in a snifter. Pours light yellow with a finger of light head which never totally disappears. Smell is of funky lemons and grass. Mouth feel was very light with a touch of body and a lot of carbonation, just a tad too much so. Taste is of funk, pepper, grass, floral hops and is so, so good. It’s as if Duvel and a wit had a baby, this would be it. I really like wits and this one was well towards the best ones that I’ve had. It’s unbelievably drinkable with a good amount of alcohol and just the right amount of body. The champaigne yeast really does it for this one. Great job Dock Street!!!!

On draft at Capones. Pours a cloudy amber with a medium sized white head. Aroma of banana, cloves, candied malt and sweetness. Taste is much the same as the aroma with hints of tea and alcohol.

DocLock (5971) - Lower Pottsgrove, Pennsylvania, USA - MAR 7, 2009
Draft at Craft Ale. Pours turbid dark straw, more toward gold than brown, with a 2-finger creamy off-white head and copious lacing. Nose is candi sugary malt, citrus, hops, white peppery, and floral notes. Definite Belgian aroma here. The flavor is citric, hoppy, more orangy than limey, with definite candi sugar and spicy/peppery undercurrents in the malt. Complex, but a tiny bit sweet and cloying as it warms. Purists may call this a hybrid style not worthy of wit designation, but I call it a very good beer at any rate.

Nice yeasty citrus, but the carbonation from the champagne yeast makes the bubbles tight and gives it a lighter mouthfeel. Smooth and drinkable.

On tap at the brewpub. Foggy olive yellow with a thin white head. Nose of dough, lemon peel and juice. Creamy with mild sparkling carb. Taste a unique wheat and yeasty lemon with hints of orange peel and banana.

From the tap poured a nice hazy straw color with a fair amount of head. Nice light citrusy flavor with a quick finish.

Pale golden color with a white head. Aroma of citrus, wheat, straw. Flavor is tart and aggressive for a wit - Tangy, citrusy, and crisp. Nice feel. Champagne yeast creates an interesting flavor and feel. Best wit I’ve had in awhile.

Pours light golden yellow with bubbles racing up the sides of the sampler glass. Has many characteristics you find in a good champagne, great acidity balanced with good body and a dry finish. Delightful.

KSBF ’08. Poured a medium and lightly cloudy, golden color with a small sized head. Aromas of wheat, citrus, and yeast. Tastes of wheat, lemon citrus, cereal, and lighter yeast. Wheaty.

Tap at CAH. Pours a hazy golden with a medium bubbly white head that laced. Aroma of really nice Wit spices, citrus, lemongrass, wheat and cereal grains. Flavor of the same, kinds sweet.
