Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

"interesting take an ipa (though i’d hardly call it a double). maple syrup makes for a pleasing and unique bittersweet finish. different than the brandied fruitcake of the 90 minute, but similar...and this is a lighter beer. More aggressively hopped than 60, and bottle conditioned for a different, dryer feel. pretty nice...not sure it’s worth the extra coin more than very ocassionally over 60 or 90...or Squall."

Nice dark orange head. Beautiful white frothy head. A bit citrusy and beautiful nose. Thick silky mouth taste, nice honey met taste with a sweet and pleasant hops tone.

Light but complex aromas of citrus, hops and dough. Cloudy orange color with a huge frothy head. Tingly bitter greets the tongue immediately followed by a full mouth of apricot-sweet malt. Long lasting hop bitter gets injected into the sides of the mouth and sticks around for a while. Excellent stuff.

Bottle shared at a tasting at Beer Market Jaffa. Cloudy orange with a white head. Aroma of stale hops, slightly citric, and a bit of graininess. Sweetish flavor with malt, a bit of maple, moderate citric hops, a bit stale, and a faint bitterness. Medium-bodied, rounded mouthfeel.

$9.49 bomber, Wine Warehouse. I saw a chunk of white on the side of the bottle, so I rolled it a dozen times til it mixed in. Pours hazy amber, giant frothy off-white head. Smells of grapefruit and copper. Tastes like an alcoholic fruit juice. Peach, grapefruit, apricot finish. I don’t taste the maple.

Fun idea from a brewery with many. Pours a hazy deep gold with a tight bubbled head. The carbonation is spikey and creates a great mouth feel. Taste is a touch tinny, possibly from the maple syrup? Solid beer.

Bottle... Poured hazy, golden/amber with a nice retaining head. Hoppy floral, grassy, earthy bitterness with some sweetness, berry-like fruits and a hint of maple, dark sugars, and grains. Seems like the maple syrup works with the yeast and hops to give a nice fruitiness here.

Bottle from family. Cloudy pour with a puffy white head. Fantastic floral aroma with honeysuckle, citra, pine, and orange. Taste is sweet. Less hops than what I get in aroma. Overall well rounded but on the malty end. I’ll recommend this beer to my friends who want to like ipas but dislike the typical bitterness associated with the style. This ipa is mellow, sweet, aromatic, medium bodied beer that gets a big thumbs up. Although it says maple syrup cask on the bottle I can’t taste it immediately, it’s only at the end of the palete and is only present at the end of the nose.
