Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Multiple bottles. This is okay, sorta like 90 min was back in the day. Some piney and citrus hops along with some rich caramel malt. Not as sweet as 90 (or even 60 min) thankfully. Drinkable when very fresh.

Bottle from KegNBottle (NC): Created a monstrous sizing of thick foam which took several minutes for it to simmer down. Liquid appeared a dark golden honey color with plenty of evidence of sediment floating around in equilibrium. Aroma is mild with scents of earthy hops that could possibly suggest pine but is counterbalanced against some lightly toast malt that smells typical of Dogfish’s other IPA’s or any other East Coast double IPA’s for that matter. There is a faint background of canola flower or honeysuckle that really delivers an organic nose to this beer. The flavor is subtle with no elements I mentioned in the aroma to be found in the drink but there is a notice of a buttery biscuit flavor and sadly not much else. It just falls sort of flat and lacks any character but then again it has been evenly rounded out allowing for a smooth quaffable drink.

Slightly darker amber color, moderate head, decent lace/retention. Aroma is citrus, maple, caramel, grapefruit. Medium bodied, moderate to low bitterness. Maple flavor with malts play a large role as both the 60 and 90 minute offerings aren’t hop bombs by any standard. It’s ok.

750ml bottle for 10 bucks. Huge aroma of piney and citrus hops. A little malty in the backbone, maybe a little maple syrup in there as well but not much. Taste is similar but with the malt coming more to the forefront. A nice lasting bitterness on the back end Body is above medium with a thick texture and quite sticky mouthfeel. Above average carbonation too. This is a pretty good but not amazing offering from DFH.

Pours a very hazy orange with a huge fluffy white head. Piney and sticky hops on the nose, the bitterness smell is cut by a nice roasty honey note, a nice biscuity malt note, and a light citrus presence. Really nice honey flavor, nice juicy citrus fruits, cutting piney bitterness, and a nice toasty bready malt backbone. Tasty brew, though I don’t feel there’s enough of 90 minute coming through.

Nice brew from dogfish head. Pours a hazy darkened yello, with some good head. Taste is pretty malty, sweet, with a good deal of hops. But it is not too intense in the the nose either. Bitter, and good, middle body. Has a bit of oak character, but that might be me tripping. Very nice beer!

Bottle @ tasting. Aroma is big caramel, fruity hops, light liquorice. Flavour is big hops, fruits, not too bitter. Nice one.

Long Island, NY - 750mL. bottle poured a hazy burnt orange colors with fluffy slightly off-white head and moderate lacing. Aroma was hoppy with a hint of maple. Taste is initially malty sweet followed by a tangy hop burst finished off with a tinge of honey and floral. Very balanced brew but very similar to the 60 minute IPA

Cask at blue monk. Hazy Orange yellow pour with a thin white head. Nose is maple syrup, citrus hops. Taste is sweet malt and maple syrup with a grassy hop finish.
