Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Whoa, great stuff! Beautiful hazy orange yellow with a foamy creamy white head, great lacing and retention. Smells of pungent tropical fruits - apricot, orange, grapefruit, and pineapple - caramel malt sweetness from the maple syrup I presume. Tasted refreshing, smooth, bitter and astringent - big citrus/tropical fruits, great malt backbone. Feels incredible - velvety smooth medium/full. Overall a fantastic incredible beer. ---Rated via Beer Buddy for iPhone

Pours a hazy gold with a stable white head and plenty of lacing. It has an aroma of grass, pine, and a but of city's from the hops, and the same up front in the flavor profile, followed by a sweet after taste with a hint of the syrup and a smooth mouthfeel. ---Rated via Beer Buddy for iPhone

Opaque copper pour. Thick sustaining and very lacy white head. Flavor is great. Similar to 90 minute without as much booziness. Very complex hop aromas. Floral to citrus to spicy. Plenty if malt sweetness to balance it as well. Picking up caramel and maybe a little bit if the maple. Taste is great. Again very similar to 90 minute with a little less alcohol flavors. All the malt and hop flavors copy the aroma. Great beer. ---Rated via iPhone

750ml bottle. IPA brewed with honey. This was quite enjoyable and reminded me a lot like a less in-your-face version of hopslam. Itís too bad this is priced out of a good session range. I could see myself drinking nice 12oz bottles of it.

750 ml bottle. Pours a slightly hazy orange/amber with a 2 finger rocky white head which took its sweet time settling down. Mild citrus aroma with a sugary sweetness. Fair amount of citrusy hop taste with a faint hint of real maple syrup. I was hoping for more maple myself. Nicely blended. Full palate.

Bottle. This is a really smooth drinking IPA with a nice sweetness and less of the grassy edge you find on the 90.

Pours a honey-orange color- very clear with a huge, foamy, white head. Very nice aroma of orange, lemin, pine, honey, oak, and maple. Tastes sweet with a slight citrus-tartness and light bitterness on the finish. Flavors of honey, lemon, sweet malts, hops, and bread. Nice sipper. The maple is hard to single out, but is still a differentiator.

Poured from 750ml bottle to snifter a dark golden color with a nice head. Aroma of hops and citrus with a slight maple undertone. Mouthfeel is a medium carb and smooth. Taste is bitter hops at first then becomes a bit sweeter Overall I love this. Very tasty and drinkable. Wish it came in 6 packs

Pours a bright, slightly hazy golden with a big, frothy white head. The aroma is big on grapefruit and pineapple, along with peach apricot, and a good amount of pine. Very tasty when drinking. Much of what is found in the aroma, I find in the taste. The pine comes out more, and while still plenty of citrus is in here, it is very well balanced with all of the impressions. I get the pineapple standing out just a bit above the rest. Bitter, with a pine, grapefruit, and pineapple aftertaste. It isnít extremely hoppy, and lacks that bitter hoppy kick. Medium in body and sticky, while smooth, in texture. I enjoyed this. Its very tasty balanced well in all elements, without being to extreme in any aspect. I could drink this all night.

Bottle. Pours a hazy dried-apricot orangey color with a healthy off-white head, excellent retention and mad lacing. Nose is candied orange, malt and some tropical fruit. Mouth is medium-full bodied, lightly sweet, citrusy hops and some caramel maltiness up front, hint of woodiness and maple syrup, then smooths out into some bread, then a light lingering bitterness that fades out. Iím admittedly not a huge fan of the 90 or 60 Minute versions, but this one is pretty good stuff.
