Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Very nice. Quite hoppy, with a nicely balanced body. Fresh, exciting, delicious. This is arguably in the sweet spot between 60 and 90.

1Pint 9.4oz bottle. Pours a slightly hazy and the colour of honey with a large three finger head of fine off-white bubbles. Resinous notes up front, peach, pineapple, and a faint note of darker malts. The taste is also up front with the resinous notes, tropical fruit, with a surprising wallop of bitterness in the middle. The maple syrup makes it’s presence known in the finish as well as some malt, and some Fisherman’s Friends-like bitterness. It’s excellent, and it definitely succeeds as an IPA. Unfortunately, it also succeeds at making me want more 90 Minute IPA which is an international border away. Dear Canada, open up your beer borders.

Split bomber with sherm1016; thanks! Poured into my dollar store tulip; cloudy golden/yellow with one finger head. Mild citris hop nose and initial taste. Maple more in the background to mellow out the usual DFH bitterness. Enjoyed it!

Bottle. Pours a hazy golden orange with a huge foamy white head. Aroma of pine, caramel, citrus and some light maple. Creamy flavor of caramel, piney and citrus hops, biscuit, earth, and subtle maple with a dry and bitter finish.

(750ml bottle) Pours a hazy golden orange body with a tall rocky long lasting white head. Aroma of grapefruit, florals, tangerine, grass, pepper, and mustiness. Flavor of herbs, grass, caramel, resin, citrus, and earth with a dry, bitter finish.

Bottle, shared with Parksy and Grippitis. Cloudy yellow-gold, with a large lacy white head. Fresh aroma, like the sea, with high notes of citrus, fresh peach, celery. Sweet cereal malt, lightly toasty (but no maple syrup that I can detect), lightly floral hops and delicate citrus. Much more delicate and lovely than I had hoped for. I liked this even better than the 90 minute I think!

Pours a cloudy light amber with a pronounced fine beige head worthy of promo shots. Aroma of pine, grapefruit, bread. Good body, fine carbonation, a bit sticky, thick texture. The taste brings through the maple syrup only a bit, which may explain the stickiness/thickness. Dogfish always seem to get a great bitter and sweet balance going, and this is no different. good bitter finish. I want pancakes. Viva la ipa.

Bottle thnx to Ed. Looking forward to this one. Pours a clear orange beer with a big white, pillowy head. Aroma is full of citric hops and malt influences. Grapefruit and pine and definitely picking up some maple syrup. Flavor is a great mix between hoppy bitterness and malt, syrupy sweetness. Easy drinkable, gets better when warning up. Awesome beer!

Enjoyed at a @JaxBrewBitch bottle share at Brewer’s pizza in Jacksonville,FL... This one was the 2011 batch that had been cellared by @beerapostle. Nice and balanced, thought the aging mellowed the favors too much, I was expecting more. Would like to try a freshy.
