Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

It pours a beautiful light golden orange leaving the same color body with some nice haziness added. A one inch white foamy head appears inside the nonic pint glass. The smell has the maple syrup up front, but not overbearing, because I can still smell the hops, some light grapefruit and some light malts. The taste is sweet with the maple syrup up front but not overbearing still combined nicely with the hops, grapefruit and malts. The palate is between light and medium, no problem finishing off the bomber that was sitting on my buddy’s store shelf since August. Overall, this is an excellent American IPA that is borderline English because its so sweet. Next time, I want this with pancakes and sausage at breakfast.

Cloudy orange with a pale head. Aroma is pineapple, citrus. Medium bodied, hoppy on the palate. Taste is grapefruit, pineapple, papaya. Not as good as the 90 minute.

Loads of honey, caramel, and toffee in this...not what you want in an IPA. Mild citrus, evergreen, grapefruit pith and orange peel. Medium mouthfeel. Meh.

Really nice but honestly was expecting more hop punch from this. The honey and malt come through quite strong with the piney hops taking a back seat.

Very clean bitterness, long finish. Bottle pours a little hazy due to yeast sediment. Easy to drink. Palate is smooth. WIsh it was more complex. Overall good.

Bomber to glass shaker. Pours a clear yellow with a thick white head that doesn’t dissipate. Light hop flavors, and medium dense mouthfeel. I was expecting something heavier. If this make sense, it seems to me to be lighter than that 60min. I can’t really taste any maple syrup as advertised. For the rarity, this gets a strong "meh"

Bottle from Khoury’s; clear amber pour, frothy white head, malt and honey aroma, as with the 60/90 great balance of malt and hop, citrus hop bite biscuity malt, heavy carbonation. Excellent IPA.

UPDATED: FEB 22, 2014 I have to admit I’m a sucker for maple syrup in my stouts (like CBS) but I found out I’m also a sucker for it in IPAs if done right. This is a nice mix of 60/90 min IPA for the malty bitterness and the maple syrup cuts right through with a little sweetness and balance. Wonderful!

pours golden yellow with white head. aroma is light citrus hops. taste is primarily citrus hops and some tropical fruits with little to no bitterness - it’s well balanced by some creamy malt flavor. finishes with clover honey sweetness. exceeded my expectations - it’s very, very well done, and immediately one of my favorites.
