Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours from a bottle a cloudy dark amber with a pillowy off-white head. Not sure what I’m missing here. Aroma is floral hops, maybe Cascade? Flavor is a nuanced, but underwhelming sweet hop blend. Finishes fine.

Pours with a solid inch of white froth floating atop opaque orangish gold. Head dissipates relatively quickly. Resinous citrus nose that is somewhat overwhelmed by an inherent sweetness. Tastes include peaches and sweet maltiness. Subtle complexity as hops creep up throughout, but are not as prevalent as one might imagine. Very crisp and drinkable with nice warm finish.

Pours a murky honey color with an off white head and good lacing. Aroma is fruity and toffee sweet with some biscuit also. Taste is similar with some caramel sweetness and some pineapple and apricot fruitiness. Also get some biscuit flavor and you can detect the maple in the background but it is by no means pronounced. Finishes with a hint of bitterness. Has a velvety mouthfeel with a medium/full body and moderate carbonation. Interesting like most DFH brews but would rather have a well made straight ahead IPA.

Slightly hazy dull golden orange, minimal bubbles on the surface. Smells of citrus hops, caramel malt, slight bit of maple, flowers, . Taste is a smooth citrus/flower hop flavor, a little spice akin to coriander or white pepper, flowery, with plenty of caramel malt sweetness. Can't detect much of the maple syrup in the taste, but it's there. Light bodied, mild carbonation. Would have liked more of the maple syrup character, but still a good brew. ---Rated via Beer Buddy for iPhone

Bottle. Orange malt and pine/grapefruit peel aroma. Hazy amber with large off-white head. Sweet orange/apricot malt and moderately bitter grapefruit peel flavor. Nice body.

bottle - Pours deep copper with a two finger, lingering head. It smells of citrus, pine, and lightly toasted malt. The flavor has a good crisp bitterness with citrus and pine balanced by a big dose of sweet malt. I really enjoyed this one.

The aroma is hops, spruce and citrus. Pours a golden yellow/orange with a big white head, excellent lacing and mostly lasting. The taste is bitter. The body is medium, the texture creamy, the carbonation lively and the finish bitter. Very good.

Incredibly smooth mouthfeel. The caramel and toffee creeps in with perfect balance to the citrusy yeast flavors, all finishing with understated hops. Balance is really impeccable here and is aptly named, falling right between the 60 and 90 minute offerings. Creamy, hoppy and moderately malty.
