Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle. Orange malt and pine/grapefruit peel aroma. Hazy amber with large off-white head. Sweet orange/apricot malt and moderately bitter grapefruit peel flavor. Nice body.

bottle - Pours deep copper with a two finger, lingering head. It smells of citrus, pine, and lightly toasted malt. The flavor has a good crisp bitterness with citrus and pine balanced by a big dose of sweet malt. I really enjoyed this one.

The aroma is hops, spruce and citrus. Pours a golden yellow/orange with a big white head, excellent lacing and mostly lasting. The taste is bitter. The body is medium, the texture creamy, the carbonation lively and the finish bitter. Very good.

Incredibly smooth mouthfeel. The caramel and toffee creeps in with perfect balance to the citrusy yeast flavors, all finishing with understated hops. Balance is really impeccable here and is aptly named, falling right between the 60 and 90 minute offerings. Creamy, hoppy and moderately malty.

Another winner from Dogfish Head. This blend of 60 Minute and 90 Minute IPAs - cask conditioned and post-hopped - comes with plenty of pine and citrus, along with some tropical fruit. Beautifully balanced with sweet malts. Smooth with a decent bitter finish

Bottle at Rattle n Hum NY. Pours a clear orange with minimal head. Nose is sweet, probably from the maple. Light fruity hops and some pine. Taste is much the same. Maybe a bit unbalanced in my opinion. A bit too sweet. ---Rated via Beer Buddy for iPhone

Bottle: Hazed amber-orange with a foamy, off-white head. Pine, pineapple, orange marmalade scent. Taste is sweet, orange-peel, straw, syrup...malty..with a slight peppery spicing in the hops... really good stuff.

Poured from 750 mL brown bottle. The body was hazy apricot color. The aroma was peaches and bread. Some spicy hops. The taste was not too hoppy. Not really tasting the maple syrup but just a sweetness. Quite good.

750 ml bottle. Cloudy orange color with thick sheets of bubbly lace down the sides of the tulip. Aroma is bright floral and pine with sugary sweetness.

The flavor has the hop varieties up front and transitions into a malt sweetness with a very minor hints of maple to balance the whole brew. Very balanced IPA yet the aroma is better than the flavor. For the standard IPA classification; it is about average. Drinkable can could be a service to your wants.

Pours a heady,hazed orange. 5 mo from bottle bought from room temp shelf. Aroma of light sweet, biscuit/toasty malt, hop fruit, grape, purple berry, and some citrus, cherry and kind of wine honey mead like overall. Fairly complex.Taste is maltier than sixty minute and more fruit notes and toasty buiscuit character. Maple comes across like a vanilla caramel mild flavor. With slight noticablitlity of maple in the finish. Maple adds a weird but ok kind of complexity to it overall. I like this abv as an ipa but there are a lot better ones in this range. Id rather had this fresher also but that is not possible in my state yet.
