Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

750 ml. Pours orange with a huge head. Aroma and flavor is a citrus bomb, grapefruit and orange. Pine notes also behind the subtle maltiness. Long bitter lingerness on tongue. Great IPA!

Poured a deep orange color with a huge white foamy stable head. Very nice aroma with citrus and sweet malts. Lemons and some pine as well. Taste has lots of sweet caramel and maple notes with a good amount of citrus hops. The balance is just about perfect. Very crisp with a sweet maple syrup finish. Carbonation is a little much. Overall very nice, almost as good as the 90 minute.

Bottle. A golden color with a nice white head. A nice toasty and light grapefruit aroma with a light jam / maple finish. A sweet maple finish with a less assertive hop bite than I expected.

Smooth as silk. The best of the Minute IPAs. Has a mild hoppy aftertaste. The only downside is the $12-13 price per bottle.

Bottle. Pours a light, hazy copper. Aroma is syrup and hops. Flavor is initially sweet with a hoppy, bitter finish.

Pours a cloudy orange gold color, with a mild but pleasant aroma of hops and little malt. Flavor is relatively dry and clean, crisp malt with a balance of fairly uninteresting hop bitterness. This is a very balanced IPA, which is it’s strength, but it lacks much of interest. I do not get maple syrup in this at all. Good on it’s own terms, but not one I need to come back to.

Poured from a bomber. Light gold pour with a large white head. Good amounts of citrus floral and pineapple taste.

UPDATED: JAN 26, 2014 Bomber. Citrus hops on the nose, maple is prevalent in the taste, but not overpowering. The best of the 60/75/90.

Bottled. White head. Shiny cloudy amber gold. Strong pine citrus resin aroma. Taste has surprisingly malty finish
