COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Golden color with very good clarity, lots of creamy foam, ok lacing. Rather light hop aroma, slightly flowery and herbal, grass, a bit of caramely malt. Flavor is a mix of grapefruit bitter, tobacco, spice, grass, a buttery note from the maple i suppose? Good, but there is an indefinable aspect that i don’t personally find appealing. It may be that it all comes together to leave a slightly astringent after taste.

Pours a green-orange with a thick, fluffy off-white head. Aroma is pine, caramel, some sugar/maple, grass, citrus, bread, floral. Taste is citrus, pine, caramel, nice hop bitterness, spicy, finishes with a very smooth sweetness (form the maple barrel?) and a subtle bitter bite at the very end. Similar to it’s component beers, but with that nice smooth and sweet-bitter finish. Nice lacing; thick. Chew mouth feel. Lots of carbonation. I like this, absolutely but it didn’t knock my socks off.

Shared bottle poured to snifters. Very, very, VERY nice. The beer drinks like a big ABV DIPA . . . by that I mean big flavor, not the booziness. The maple syrup doesn’t make it syrup; it adds a nice aftertaste. This is definitely on my "buy when available" list.

Really good IPA. But what did you expect? This is Dogfish doing what it does best. Near perfect for this type of beer, so grab a bottle if you can find one.

Bottle. Clear golden with a foamy white head and champagne carbonation. Nice zesty lemon and orange aroma. Great lively creamy yet silky full bodied palate. Taste is exceptionally balanced between the caramel and malt flavors and a citrus bitterness that finishes with lemon zest and subtle molasses flavors. Very good.

750 ml bottle into signature tulip glass, 2012 bottling. Pours lightly hazy golden amber color with a nice 3 finger dense off white head with incredible retention, that reduces to a nice cap that lasts. Very nice dense soapy lacing clings to the glass, with a good amount of streaming carbonation. Aromas of big grapefruit, orange zest, pine, lemon, herbal, floral, grass, caramel, bread, light maple, and light piney spiciness. Excellent aromas with great balance and hop complexity. Taste of grapefruit, orange zest, pine, lemon zest, caramel, bread, herbal, floral, grass, earth, toast, maple, and piney spiciness. Good amount of piney bitterness on the finish; with lingering notes of citrus, pine, caramel, bread, toast, herbal, floral, grass, earth, maple, and spiciness on the finish for a good bit. Very nice hops flavor complexity and balance; awesome malt/hop bitterness balance; zero cloying flavors present after the finish. Medium carbonation and body; with a lightly creamy, slick, sticky, and very crisp mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a highly excellent IPA! Great hop complexity and malt flavor balance with the maple syrup; extremely smooth and crisp to sip on. A highly enjoyable offering as I expected.

750 ml. Pours orange with a huge head. Aroma and flavor is a citrus bomb, grapefruit and orange. Pine notes also behind the subtle maltiness. Long bitter lingerness on tongue. Great IPA!

Poured a deep orange color with a huge white foamy stable head. Very nice aroma with citrus and sweet malts. Lemons and some pine as well. Taste has lots of sweet caramel and maple notes with a good amount of citrus hops. The balance is just about perfect. Very crisp with a sweet maple syrup finish. Carbonation is a little much. Overall very nice, almost as good as the 90 minute.

Bottle. A golden color with a nice white head. A nice toasty and light grapefruit aroma with a light jam / maple finish. A sweet maple finish with a less assertive hop bite than I expected.
