COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

A blend of the 60 and 90 minute IPAs with a hint of maple syrup thrown in the mix. Pours a dark golden brown with an enormous 2-3 finger head out of the bomber. Taste is almost exactly what you would expect if you have had the two aforementioned beers, and add a slight sweetness from the maple syrup. One of the better Dogfish beers, but still odd like the rest of their stuff.

Very solid IPA. They did a nice job balancing the aspects of both of the individual beers. The maple syrup aspect does come through and it adds a certain "special" flavor to the beer. I seem to get more of the 60 minute on the initial taste and then later in the middle and finish I get some more of the complexities that are associated with the 90 Minute IPA

Bottle. Poured clear copper color with a large frothy off-white head that lasted with excellent lacing. Moderate sour citrus hop aroma. Medium to full body with a slick texture and soft carbonation. Moderate to heavy bittersweet flavor with a moderate to heavy bittersweet finish of medium to long duration. This a solid brew.

750 ml bottle from Miamilice. Pours clear amber with a large foamy soapy off white head that slowly fades to a film and lacing. Aroma is sweet and spruce like with some faint metallic scents. Taste is bitter pine spruce and some syrup like sweetness along with caramel and some vegetable and metallic notes. Palate is medium and sticky with a chalky dry finish. Overall a decent tasting IPA with a little over the top with the metallic vegetable tastes coming out.

750mL bottle from 2012. Pours slightly hazy gold and orange with a 3-finger frothy beige head; long retention and webby lacing. Aromas of sweet maple syrup and spicy pine, with some funk and alcohol as well. The flavor is sweet and spicy citrus, moderately bitter, with some chalk and bark evident. Dank citrus and some maple syrup-infused alcohol in the finish, with a sweet and bitter aftertaste. Medium to high carbonation and medium body. Nice; crisp and easy-drinking. [1002]

Bottle from Carrboro Bev Company. Aroma is quite complex and unique. Oaky tannins, maple, citrus hops and caramel.. Flavor is a little more malt driven than I would like tho the hops are there.

UPDATED: MAY 22, 2013 Re-rate on cask at the brewpub. Pours very hazy brownish copper with a medium sized white head. The aroma has pine, floral notes, a big citrus balance.. Almost a mango and apricot note. The taste is medium bitter with sone light citrus sweetness.
