COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

In short: A typical IPA plagued by a soap/perfume aroma and flavor
How: Bottle 750ml, consumed fresh a few days after purchase
The look: Almost clear golden body topped by a medium off-white head with good retention
In long: The hoppy nose of medium intensity is floral, soapy, herbal, perfumy, a bit piney and a bit citrusy. That perfumy/soapy character is not my thing and I donít remember getting it from the 60 and 90 Minute versions. Weird. Taste starts with toasted biscuit malts, plenty of plain semi-sweet cookies. Then the hops, nothing overwhelming here, medium intensity bitterness, very herbal, pine-tree and unfortunately quite soapy. The soapy/perfumy character plus the pine-tree brought a scented wood sensation, similar to freshly cut cedar but even more perfumy. The soapy/perfumy character didnít overwhelmed the beer, drinking a full 750ml was no problem at all but it wasnít a super pleasant experience either. Not something I will buy again. I need to revisit the 60 and 90 Minute because thatís not the hop signature I remember from those two classics. I liked the full body mouthfeel with plenty of soft bubbles. Not a bottle I should have bought but I just canít help myself when Iím in a beer store, I have no self-control, but at least if it is true that we are our worst enemy then I have nothing to worry, if I ever try to hit myself a drunk fuck like me will totally miss.

Cask at The Old Toad Dogfish Head Fest 5. Deep copper with a fine, low, head. Nose of citrus (lemon and orange), gumball, orange zest, light caramel, phenols. Lovely toasty malt flavor, great balance, citrus and grass. Perfect bitterness. Great.

Bottle.. Great pale amber color, nice excellent head retention white head... This is the best example of a beer poured from a firken represented in a bottle, while the flavor wasnt necessarily excellent though it was a bit piney earthy and sweet... The mouthfeel body was exquisite...

This beer has the softest mouthfeel. Pours a light amber color with a creamy canvas Colored head. Notes of green hops, butterscotch, citrus rind, l flowers, and bitter grains. Good

UPDATED: OCT 15, 2013 Pours real dark caramel with hints of red and copper. Thin and bubbly white head, which starts out at about a finger or less but thins out to the edge. Can see through this beer. Roasted caramel and maple incorporated in smell, along with some light floral and malt hops. Taste dominated by caramel with hints of maple and bready goodness. Mouthfeel is light, creamy and smooth with a bit of bite, not much.

This beer was ok but expectations not met. Seemed like less hop aroma than 60 or 90; did not appreciate maple; attractive pour with bottle-conditioned haze; taste rich and malty with underrepresented hop presence IMO. Again, ok.

750 mL bottle. This is a good beer. Donít specifically get maple in the aroma (or flavour), but it does smell sweeter than the 60 or 90. What it brings to the aroma is balance. And what it brings to the mouthfeel is body. This is better than either of itís parent beers, because it is more interesting. A shame it isnít more common.

pours a hazy orange color with a lively off white head. aroma is a nice bouquet of citrus hops. taste is strong citrus and piney hops with a nice sweetness that i would think comes from the maple syrup conditioning. a little dry tasting but not bad. very tasty brew

Pours a dark copper brown with a big off white frothy head. Aroma is sweet maple syrup and earthy hops. Taste is a solid earthy hop bitterness coupled with sweet caramel malts and maple syrup. An interesting combination.
