COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours hazy golden color with large head. Aroma of hops, fruits, mild grass and goose berry bush. Flavor of fruits, caramel, mild yeast, pale malts and some hops. Quite mellow, could have been a bit hoppier.

Aroma has biscuits, hay and hints of fruits. Flavour has bready malt, some citrus, mandarin and hints of resin. A bit too bready but decent anyway.

Pours a hazy, dark golden orange color with yellowish-orange hues and a massive 2.5/3 finger, frothy white head that very slowly settles into a lasting cap.  Chunks of soapy lacing left behind. Sweet yet earthy aroma with some grassy pine and sweet malt notes.  The sweetness of the syrup and malts take away from the hops.  Hint of caramel, toffee, nut and sweet maple.  Too malt forward for my preference.   Medium bodied with some tight carbonation and subtle signs of infection. Balance of dry and sweet notes.  Dry bitterness with some earthy/soily notes that get overpowered by malt profile and maple.  Hints of toffee, caramel hazelnut and syrup. Too malty and sweet with little to no interesting hop flavor.

Scored a bottle in Boston. Very cloudy orange, with a big, pillowy head. Really nice nose -- juicy citrus, a shade of pine, with a biiiig caramel backbone showing a bit of that maple. Flavor is very full -- a caramel-backed thick IPA up front, with a burst of bitter citrus hops surging like a wave toward the finish. At the very end, it fades into that smooth maple -- really, really nice

Bomber. Pours a clear yellow gold with large creamy off white head leaving sticky lacing along the glass. The aroma is yeast honey and citrus. Thin mouthfeel with a light grass hops and resin with light bitter finish. Easy to drink a good IPA hiding alcohol well.

Bottle. Lighter than I expected. The head is towering and takes a long time to settle ... The retention is amazing. So is the aroma ... hints of a big alcohol laden brew. This drinks with a spicy, earthy assault on the palate. The hops are full-on leafy ... big time. My buddy calls it out ... like Aprihop without the Apri. Good, good stuff. (#4697, 7/15/2012)

THOUGHTS: Decent balance. I was actually expecting something sweeter because of the maple syrup. Tons of hop aroma. Not that it tasted bad, but I wish it tasted as good as it smelled. This might age nicely. Some potential there. Nearly a DIPA’s amount of flavor and balance. TECHNICAL: BOTTLE. Poured a hazy, light to medium orange with a large to huge, foamy, meringue like, off-white, head that diminished extremely slowly into a nice sheet that left excellent lacing. The aroma had moderate caramel; moderate to heavy floral, pine and citrus leaning toward orange; and maple syrup. The initial flavor was both light to moderately sweet and bitter; while the finish was lightly sweet and moderately bitter. There was orange hops, pine hops, caramel, maple syrup in the finish, other citrus hops and floral hops. The medium body was a little sticky on the lips, but dry with fairly fizzy carbonation and a dry and lightly astringent finish.

1 Pint 9.4 fl oz bottle via Luc, shared with friends, cold, pilsner glass. Hazy deep golden with a thick off-white head. Nice blend of crystal malts, C-hops, pine, burnt sugar, quite nice. Medium body, full, round effervescence. Delicious br sugar, pine/resin, C-hops, burnt sugar, blood oranges; dry with good bitterness and a long, lingering sweet finish.
