Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Hazy, light, orangish brown. Aromas of grapefruit, lightly bruleed sugar, a slight toastiness and candied citrus. Flavors of candied citrus, bitter grapefruit and classic Dogfish bruleed sugar notes linger on the finish. Not as rich, full bodied and malty as the 90 minute.. Though a good balance of malt richness and bitter citrus hoppiness. Nice weight in mouth and fine carbonation. --- tasted while on a long journey to understand the world around me...

pours golden with a thick, lasting white head and foamy lacing. aroma is hoppy with notes of lemon, yeast, and coriander. taste is rich with maple, lemon, pine and wood. sticky mouthfeel, full bodied. rather acidic. finish is sticky and bittersweet.

Pours cloudy golden orange with pillowy white head. A dry hop presence on the nose- very earthy. A very balanced palate with dry earth flavors and a touch of citrus. Nice palate, rich and not over bittered.

UPDATED: NOV 15, 2012 This beer is what I had hoped it would be; sessionable with more of a hop profile than 60 minute but not as sweet as 90 minute. The pour is a dark gold color with a huge fluffy off-white head. Citrus hops with grapefruit and lemongrass flavors, some herbal undertones, and a touch of pine toward the back end. I would have never had known maple was in this if I didnít read the description and Iím still skeptical. At no time did I pick up that. Maybe itís a shade too light/thin in the body but nothing to worry about. Crisp bitterness and refreshing, with some nice flavors makes this one a keeper. This is a pretty solid IPA and Iím generally not a big fan of Dogfish Head.

Bomber---->snifter. Pours a dark straw witha huge fluffy white head and crazy lacing. Aroma is floral and sweet citrus. Taste is same as smell with a little sweet malt thrown in at the end. Palate is pretty smooth with good carbonation. Not sire why I was expecting more, but this one is just average.

Bottle. Pours a deep, thick cheddar orange with a huge flippiní white head. Nose is grapefruit, orange peel, pine, rose, and new carpet. Flavor is garpefruit pulp, orange juice, rose, and light biscuit. Decent mouthfeel. Thereís maple syrup in this??? Where?

Had the version bottle conditioned with maple syrup. Strong, very hoppy aroma definitely has a hint of maple as well as a citrus fruity touch. Pours a nice clear amber with a fairly thick pale wheat head. Hoppy, lively flavor is more fruity than bitter and has a subtle maple syrup note but is not too sweet. Smooth texture has good body and fizz. Love the label on this version! Another winner from Dogfish Head.

A sweeter and nuttier IPA. I donít what the back-story is behind this that they chose maple syrup. The aftertaste is very nice. The mouthfeel is a bit too fizzy for me; itís a shame that I had this from the bottle because I know for a fact that if I was at the brewery and had it on cask, itíd be a lot smoother and nicer. This is good, but whatís right for me is their 90 :o)

A-unfiltered golden yellow with beautiful thick white frothy head. Solid lacing. M-full but light. Faintly watery. S-citrus hops, pine and soap make up the front, with lemon zest and light malts on the finish. T-grapefruit pine and soap, with lemon juice to follow. Carmel malts make up the spine.
