Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

From a 75 cl bottle shared with friends. Pours a cloudy amber with a thick off white head. Fruity hop aroma. Strong hops muted by maple syrup. Bitter finish. Nice.

1 pt 9.4 fl oz bottle courtesy of MK. Pours a cloudy burnt orange with large, slightly off-white head. Aroma is juicy, piney/citric hops with caramel and very subtle maple syrup. Flavour has similar hop profile with solid malt base and gentle maple sweetness. Nice bitterness in finish. Quite good.

Bottle. Clear gold pour with white head, nice lacing. Aroma of dank hops, really grassy, maple syrup is present actually, pine, a tad yeasty. Taste is slightly sweet, good citrus hop flavor, not very bitter at all. Palate is a tad sweet/heavy, carbonation is medium. Good beer, not sure about the IPA style, but a nice hybrid style. Nothing like what a 50/50 blend would taste like I believe.

bottle shared with mathieuc, tom10101 minderbinder and others. thanks david! hazy light yellow orange, nice off-white had, good retention/lacing. earthy, spicy malts - nicely toasted, some leafiness and sweetness. average carbonation, short to medium long grassy, medium body - oily. nice but freshness is missing or hops have faded significantly.

Bottle (750 ml). Shared by David M., thanks! Unclear yellow/orange with a small white head. Aroma of malt/caramel with citrus and resinous hops. Taste is sweet and malty (caramel) with a smooth hoppy finish. I didn’t smell or taste the maple syrup. Good well balanced IPA but a little too malty for my taste (maybe because the bottle was old?).

Dogfish Head sure knows how to brew with special ingredients (until they have the occasionnal failure but they usually make up for it). This one was really malty/sweet but with a lot of hops to counteract. Nice! I couldn’t really taste the maple syrup but I believe this is a hard taste to put in a finished product as it will most likely just ferment out and lose its aromatics.

Pours a strinkingly clear amber with an aggressive, pillowy head that is slow to dissipate. (poured into a tulip). Mellow, orangehop aroma. Something sweet smelling. Nice, smooth taste.Hop character melds with a sweetness that makes this pretty delish. A little nutty. Darker finish that other IPAs. Residual sweetness. Very good. Not a beer to chug but one to savor.

Bottle from Burger Bar at Mandalay Bay. Clear orange-amber color with a really large whitish head. Aroma of citrus and maple syrup. Balance weighted toward the bitter side, but the syrup adds a little sweetness that comes through nicely. Fizzy and dry on the palate; medium bodied. I actually prefer either the 90 or the 60, though the 60 not by much.
