COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle. Lighter than I expected. The head is towering and takes a long time to settle ... The retention is amazing. So is the aroma ... hints of a big alcohol laden brew. This drinks with a spicy, earthy assault on the palate. The hops are full-on leafy ... big time. My buddy calls it out ... like Aprihop without the Apri. Good, good stuff. (#4697, 7/15/2012)

THOUGHTS: Decent balance. I was actually expecting something sweeter because of the maple syrup. Tons of hop aroma. Not that it tasted bad, but I wish it tasted as good as it smelled. This might age nicely. Some potential there. Nearly a DIPA’s amount of flavor and balance. TECHNICAL: BOTTLE. Poured a hazy, light to medium orange with a large to huge, foamy, meringue like, off-white, head that diminished extremely slowly into a nice sheet that left excellent lacing. The aroma had moderate caramel; moderate to heavy floral, pine and citrus leaning toward orange; and maple syrup. The initial flavor was both light to moderately sweet and bitter; while the finish was lightly sweet and moderately bitter. There was orange hops, pine hops, caramel, maple syrup in the finish, other citrus hops and floral hops. The medium body was a little sticky on the lips, but dry with fairly fizzy carbonation and a dry and lightly astringent finish.

1 Pint 9.4 fl oz bottle via Luc, shared with friends, cold, pilsner glass. Hazy deep golden with a thick off-white head. Nice blend of crystal malts, C-hops, pine, burnt sugar, quite nice. Medium body, full, round effervescence. Delicious br sugar, pine/resin, C-hops, burnt sugar, blood oranges; dry with good bitterness and a long, lingering sweet finish.

poured from bottle into a tulip. Pours a nice orange color with a very foamy head. Really good and complex aromas of citrus, florals, hops, tropical citrus and some resiny notes too. Full bodied with a very good and smooth upfront attack. Thins out a slight bit on the mid with well balanced flavors of citrus, resin, and florals with a touch of hops. The taste and feel lack compared to the aromas. Still, a quality IPA and very enjoyable.

Poured a slightly cloudy amber body. A huge frothy white head that had some retention and nice lacing. Initially aroma had a nice caramel malt base, citrus hops and mild pine hops. No real maple syrup note. Flavor was well balanced initial sweetness upfront, from the malts. Hops certainly had a assertive presence but it was in now way over powering. Some mild sweetness in the finish. A well balanced beer, but at times really had trouble distinguishing the maple syrup.

Bottle shared by a friend. Clear amber pour with a huge off-white head. Aroma is piney, spicy, sweet and sorta citrusy. Sweet and malty flavor with piney and spicy hops before a maple sweet and grassy bitter finish.

Bottle. A cloudy golden beer with a huge white head. Aroma is hops, mostly floral, and a good amount of maple. Taste is medium sweet, medium bitter, with more maple syrup coming through. Bitter, sweet maple finish. Medium bodied, moderate carbonation. Good.

Aroma was a little thin...some hop presence, light notes of maple syrup, really expected more hop. Solid malt backbone with a nice citrus and pine hip flavor, light subtle maple notes. Khaki head atop a gorgeous golden amber body.

Pours a four finger white head that stays leaving a good lace. hazy amber color. Good carbonation and medium bodied. Grapefruit hop nose and flavor is grapefruit hops that are mellowed by the maple syrup. Higher ABV is hidden. Light bitter aftertaste. $8.59 for a 750ml bottle from Beverage Warehouse Winooski, VT.

Cask. Hazy orange with a creamy off-white head. Citrusy hop aroma, caramel sweetness. Flavor is sweet but balanced nicely by strong bitterness. Not as upfront hoppy as the 60 and not as sweet as the 90. Sits nicely in-between the two. Creamy on the palate.
