Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle from Vegas. Pours hazy orange with sediment, two fingers head. Smell is light citrus, soft. Taste is smooth, sweet, citrus hoppy. Very good ipa.

Tasted on 8/20/12 from a capped 750mL bottle purchased at Sun Devil. Pours clear, deep orange with a massive, fluffy off-white head that slowly recedes to thick and rocky lace, leaving sticky residue along the inside of the glass. The nose is full of lemon and orange peel citrus hops, with some caramel malt, and the maple aroma coming through nicely. The flavor is lightly floral, tons of citrus, hops, with plenty of caramel malt and some maple syrup backing everything up. The body is quite full with average, smooth up front and stinging on the back, carbonation, and a long citrus hops finish.

Botella. Hazy orange colour with a huge beige head. Sweet old fruity like quite hoppy aroma. Good mouthfeel, sweet (old) fruity hoppy citrus like flavour.

This might be my favorite of the "minute" IPAs. Aroma is grass, pine, spice, citrus. Appearance is yellow/ amber. Taste is hops with a nice malt profile to back it up. Palate is a bit sticky but not overpoweringly so (I’m looking at you 90min) Overall a nice hoppy burst.

Pours an orange tinted amber with thick white head and tons of lace. Aroma is citrus hops and slight astringent. Taste citrus, good bitterness, sweet malts, with sweet maple coming in the finish that is long and dry.

August 30, 2012 bottle at BVery’s tasting. Orangish pour with some head and lacing. Citrus hops and caramel in aroma and taste. Not sure how you take two good beers, combine them and make something worse.

Bottle: Aroma is yeast, grass, earthly sweetness. Carbonation is too high for me.

Bomber. Orange-yellow pour with a big fluffy white head. Grassy hops, yeast, and some maple sweetness. Fairly aggressive carbonation. Good hop bite. Nice brew.
