Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

The beer pours a hazy orange color with a large white head. The aroma is a mix of grass, apricots and orange from the hops, as well as some biscuit malt. The flavor has a great mix of hops, with some orange and pine, as well as some apricot and mango notes. There is also a little bit of sweetness from the toffee and biscuit malt, which keep the bitterness fairly low. Medium mouthfeel and medium carbonation. Very easy to drink.

Pours slightly hazy burnt orange color with huge off white head. Alma’s of toasted malts, citrus and bread. Grapefruit and orange flavors with some toasted malts. Medium body with moderate carbonation.

Poured a cloudy light brown with an unstoppable head- really one of the most impressive I have seen in a long time. Nicely balanced considering where it comes from!

Split into two chalices to share with my wife. Pours a nice honey gold color with huge pillows of head that stay around for a while. Great lacing. Smells of grapefruit and honey. Nice flavors of caramel, citrus and honey. Not getting the maple at all but still very tasty. I could drink this often, better then 60 or 90 IMO.

75cl bottle. Large off-white head atop cloudy body, nice lacing. Aroma is moderately sweet, grapefruit/orange, some spicy, light bread. Taste is moderately sweet, grapefruit/orange, some juiciness, light bread. Medium body, light chewiness, acidity.

Shared a bottle with beeriedeyed. Not much of a nose but an outstanding mouth feel. Starts very dry and bitter true to the IPA name but finished with a very smooth, creamy hint of what I assume is maple syrup. Outstanding beer, would drink again.

Bottle thanks to Bigmmartin. Aroma is the hoppy, carmalized malt i have come to expect from the 60 and 90 minute. I gets notes of maple, citrus, pine, and a tiny, tiny bit of oak. Palate is remarkably smooth with moderate carbonation. Flavor is sweet finishing dry. Pretty impresive.

UPDATED: MAY 4, 2012 25.4oz. bottle purchased at GCM, Gilbert, AZ. Pours a dark amber, with a white head and some lace. Aroma is mellow and wonderful,with subtle maple, honey, floral hops and pine. Taste is smooth and well balanced,with notes of pine, hops and honey/maple accents. Smooth hoppy bitter finish. Very nice IPA. The guys and girls at Dogfish are not only brewers, they are artists, and this ale is a masterpiece.

Once again dog fish blowing my IPA palate away. this ipa is medium bodied full flavored, great appearance. love it
