COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Not usually a fan of dogfish, but this one has the perfect balance of complexity, heft and even surprise. The color, mouthfeel and aroma and excellent, with a lingering bitterness following an early, earthy burst. Downside is the 7.5% alcohol, which feels like a chest to boost the taste, and cuts into the joy of having more than a couple.

750 ml. Huge head that I had to slurp off even with a gentle pour and never quite went away. Nice floral hop aromas and some malt and hay. Very balanced all around. Maple syrup influence is very subtle but there if you look for it in a rustic, earthy note. Nice beer, very smooth and drinkable.

Bottle - 750mL crowned. Big, bright, gorgeous amber pour with a tall, fluffy white head. Aroma is spicy hops, caramel, maple syrup, citrus and pine resins. Taste is spicy hops, citrus fruit, floral hops, caramel, maple syrup, grapefruit juice and hints of tropical fruit. Body is medium with a soft, bubbly carbonation. Finishes with more citrus notes, orange juice, grapefruit, maple syrup notes, floral and spicy hops and soft caramel.

Pours deep mahogany into a Sam glass. White head with medium retention recedes leaving spot lacing. Mild resin aromas. Thick maple and resin upfront turning to caramel in the lasting finish.

Pour is a cloudy off orange / almost gold with a huge white head, with huge retention. Nose is of hops with a sweet backbone. Taste is the same,with a bit of an odd aftertaste left from the honey, no bite is there at all from either the 60 or the 90 minute, well covered by the honey.

It pours a nice, deep gold color with a dense, creamy, off-white head. It smells nice and hoppy, but slightly subdued underneath all that foam. The flavor has great pine resin, and tropical fruit notes. Outstanding flavor! Medium bodied with low carbonation and a lingering, smooth but bitter finish.

I was very eager to try this. Poured a slight orange/ copper color. Thick white foamy heady than did not retreat. Very soft nose , the hoppiness was subdued yet present enough to intrigue the senses. A very tame bitterness nothing like I expected. Easy drinking ipa. Don’t think I would invest another 15 dollars though.

Bottle from Spirits Manahawkin. Pours out a murky copper color with a big fluffy off white head. Aroma is sweet citrus fruits, some spicy hoppy notes, bread and a lingering sweetness. Taste is of spicy citrus hops, orange rind, light wood, some maple sweetness, woodsy notes, pine hops. I like it.

Bottle in Hotel Room, Brooklyn - shared with Mette. Clear amber - offwhite head. Nice fresh hoppy, light malty sweetness, grassy, resin, citrus, grape fruits, nice bitterness, toasted malts, light bisquit, classic IPA.

From the bottle. Pours a hazy dark orange with a never ending thick white head. Citrus hops, woody, and maple syrup aroma. Medium body with lots of citrus and pine hops in the taste. Lots of resiny hops throughout, tasty brew.
