COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

750 ml bottle into signature tulip glass, 2012 bottling. Pours lightly hazy golden amber color with a nice 3 finger dense off white head with incredible retention, that reduces to a nice cap that lasts. Very nice dense soapy lacing clings to the glass, with a good amount of streaming carbonation. Aromas of big grapefruit, orange zest, pine, lemon, herbal, floral, grass, caramel, bread, light maple, and light piney spiciness. Excellent aromas with great balance and hop complexity. Taste of grapefruit, orange zest, pine, lemon zest, caramel, bread, herbal, floral, grass, earth, toast, maple, and piney spiciness. Good amount of piney bitterness on the finish; with lingering notes of citrus, pine, caramel, bread, toast, herbal, floral, grass, earth, maple, and spiciness on the finish for a good bit. Very nice hops flavor complexity and balance; awesome malt/hop bitterness balance; zero cloying flavors present after the finish. Medium carbonation and body; with a lightly creamy, slick, sticky, and very crisp mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a highly excellent IPA! Great hop complexity and malt flavor balance with the maple syrup; extremely smooth and crisp to sip on. A highly enjoyable offering as I expected.

Poured into a perfect pint. 4.0 A: Lightly hazed yellow orange color. Big three plus fingers of creamy beige head. Retention is pretty good and a good bit of lacing is left. 4.0 S: Nice solid hoppiness on this. Floral, citrusy, and perhaps a touch herbal. Lilac and orange stick out the most with tropical undertones. Bit of spice underneath. Crackery maltiness with light caramel and a moderate, balancing sweetness. Maple syrup is subtle, but does add another layer of complexity. Booze is well hidden. 3.5 T: Taste is good, but comes off as 90 Minute Lite. I’m not a huge fan of the 60 and I like the 90 mainly for the maltiness. This sits about halfway between the two and thus isn’t as malty as I’d like. The maple syrup isn’t strong enough to breath new life into this either. That said, I’ll start the review. Malt forward still with a low bitterness. Light caramel, graham cracker, and bready yeastiness. Floral and citrusy hops with orange leading the way, tropical fruits underneath, and a light pine underneath that. Solid beer and tasty, but nothing special. 4.5 M: Mouthfeel on this works perfectly. Medium body. Velvety creaminess making this super smooth. Yeast adds body without adding chewiness. Goes down far too easy. 3.5 D: No complaints. A well rounded beer that anyone would enjoy. Serving type: bottle 10-24-2012 03:17:52

i was quite surprised with this .. . pours a murky tan amber .. medium head, lacing is quite good .. . odd tasting hoppiness but it works, a touch soapy, and quite a sweet back end .. . not bad, but happy i didn’t pay for this bottle .. . . what!?! i don’t need that, i got an angry fist in my pants!

From a bottle into a pumking glass. Pours an opaque orange-red. There is some lacing down the glass as the beer level lowers. The aroma is of citrus, hops and alcohol. The taste starts fruity/sweet, goes to bitter, and finishes with the taste of maple and oak in the back of your throat. Quite an interesting combination.

Burnished gold color out of the bottle with a fluffy white head. Bright green hop nose with some citrus notes. Caramel and toffee sweetness with bright orange zest and tropical fruit flavors. Some hop Jolly Rancher character (I wish they made a hop flavored Jolly Rancher). This is a very quaffable, hoppy beer.

Thanks Bullwinkle. What a fun beer. Brilliant use of the maple syrup as a foil for the legendary DFH hoppiness. Way too easy to drink.

Pours a cloudy golden-yellow, with massive creamy white head. Aroma is primarily floral hops, with some earthiness underneath. Flavor is marked by pine-hop bitterness and just a touch of sweetness underneath. Beer is very dry and finish is quite astringently bitter.

Cloudy orange appearance with a white tight head. The aroma has spicy hop notes with some maple syrup coming through. The colour of the beer doesn’t look like it has used any roasted malt but it does smell slightly roasty. Taste has some slight citrus notes, slightly earthy and woody. Sweet maple syrup come’s through. Quite heavy on the toffee for an IPA. IPA or not this is great beer!

Bottle. Pours a hazy orange color with a small off-white head. has a fruity malty hoppy earthy aroma. Fruity malty hoppy bitter spicy earthy flavor with hints of caramel. Has a fruity malty hoppy bitter finish.

Appearance was clear orangish gold with creamy whitish lasting 1 finger Head, spotty lacing. Aromas are dank hops, citrus fruits, pine with touch of candi, sweet pale and crystal, caramel malts. Taste are citrus fruit of grapefruit, orange, lemon, pinnapple and mango then sweet malt backbone that was there but in the background of hops with touches of candi and alcohol. Palate was soft smooth creamy CO2 with medium body, then citrus fruity malty glorious finish. Just a touch to soft in the hops, East Coast IPA.
