Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

750 ml bottle into signature tulip glass, 2012 bottling. Pours lightly hazy golden amber color with a nice 3 finger dense off white head with incredible retention, that reduces to a nice cap that lasts. Very nice dense soapy lacing clings to the glass, with a good amount of streaming carbonation. Aromas of big grapefruit, orange zest, pine, lemon, herbal, floral, grass, caramel, bread, light maple, and light piney spiciness. Excellent aromas with great balance and hop complexity. Taste of grapefruit, orange zest, pine, lemon zest, caramel, bread, herbal, floral, grass, earth, toast, maple, and piney spiciness. Good amount of piney bitterness on the finish; with lingering notes of citrus, pine, caramel, bread, toast, herbal, floral, grass, earth, maple, and spiciness on the finish for a good bit. Very nice hops flavor complexity and balance; awesome malt/hop bitterness balance; zero cloying flavors present after the finish. Medium carbonation and body; with a lightly creamy, slick, sticky, and very crisp mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a highly excellent IPA! Great hop complexity and malt flavor balance with the maple syrup; extremely smooth and crisp to sip on. A highly enjoyable offering as I expected.

Pours a hazy golden Amber with a huge head of white creamy foam and plenty of lacing. Aroma is lightly sweet citrus with some earthy notes. Medium thick body, smooth and syrupy texture. Taste is fairly dry, lightly sweet with some hints of spice like cloves or coriander. Leaves a numbing sensation on the tongue and roof of the mouth. Nice looking beer. Deep, golden color with huge white head. Aroma of tropical fruits , malt and hint of maple syrup. Bitterness and malty sweetness are intertwined. Hops dominate in finish . Medium body , rather low carbonation. Great IPA.

Pours slight hazy copper orange with a large white head that slowly fades to a thick frothy cap and has excellent retention. AROMA: crisp malt, coriander, pineapple, pine resin, herbal hops, herbs, slight earthy funk, peppercorn, maple, woody, citrus, caramel, hay, roasty, phenols and spices. Cask - Nice rich head. Only a mild bitterness from mixing the beers. Certainly has more sweetness then the 60 minute and more bitterness then the 90 minute. Has a creamy taste to it. I know there is maple syrup in her but it is only a hint, helps add to the overall sweet flavor of the beer.

Bottled 10/07/15 (so about 90 days out). Pours pale golden, white head. Aroma is classic DFH IPA, orange tangerine sweetness, lemon, definitely some sweet notes, maybe the maple syrup comes through a bit. Flavor is orange, lemon, nice citrus, and maybe some syrupy sweetness, but I feel like itís more just imperial IPA sugar sweetness, rather than just maple syrup, but as it warms, the syrup comes through more. Iím a fan, though. Itís not overly bitter, but the citrus does shine through. Nice mouthfeel as well, kinda creamy. DFH does IPAs well. Not as good as 90 min, but still great.
