Johnny Cask has entered the building! Weve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wont be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle at Abraxas lounge, Miami Beach. It pours golden yellow, with a massive, long lasting white head. The nose is fresh pine, lots of sherbet, citrus pith and a touch of dough. The taste is sherbet, orange, tangerine, pine, dough, resin, raw hop and straw, with a bitter-dry finish. Medium body, fine carbonation and velvety mouth-feel. Well balanced and very easy drinking for the percentage. A very good IPA.

750 ml bottle shared with my buddies. It pours a hazy golden orange with a frothy yellowish white head. The smell is mostly malty. There is a nice grapefruit tinge but mostly pleasant grains and some caramel. The flavor is nice. A mixture of really good malts and a good bit of hops. I am not a fan of the 60 but not the 90, this one is better than either. A nice one.

Cask at DFH Rebohoth Beach. Poured a slightly hazy orange with a big creamy, dense, yellowish, buttermilk nitro head that left excellent sheety cask lacing. Aroma is herbal hops, fresh herbs, lemon, citrus. Taste is spicy hops, leafy hops, pepper, alcohol, citrus peels, pine forest bitterness. Very nice overall. Soft carbonation, creamy palate.

Bottle. Orange malt and pine/grapefruit peel aroma. Hazy amber with large off-white head. Sweet orange/apricot malt and moderately bitter grapefruit peel flavor. Nice body.

Gravity cask at Barcade. Hazy gold beer wit a lacy white head. Aroma is very fresh and hoppy. Heavy leafy hoppiness, a bit of orange peel and grapefruit over a fairly sweet malt component. The flavour is initially quite hoppy and fresh tasting. As the beer starts to warm up, the beer starts to show a bit more of the maple sweetness along with the sticky character of the 90 minute as well. It gets fairly sticky and even cloying the more of it I drink. Lots of orange peel flavour and a resiny/piny hoppy finish. Its okay, but it needs to dry out a lot before Id even consider paying for it again.

750ml bottle, shared with friends. 2012 edition. Huge foamy off-white head. Sort of hazy amber color. Some lace. Lighter carbonation, smooth, very dry texture. An IPA with a maple syrup note. Better than 60 minute (which I think is just OK), but a lot different than 90m, which is usually pretty malty-sweet in my experience. This is a unique brew from either one of those two, and its not bad at all. Nice light sweet taste, lighter bitter. Interesting, unique and decent, pretty good brew.

Pale orange colour with small white head. Fruity earthy farmyardy hops in aroma. Dry woody malty flavour with dry fruity apple citrusy hops. Mild bitterness. Low carbonation.

2010-12-03. Hazy dark amber with a tiny head that fades. 3+ Flavour has a sharp citrus bitterness up front, sweetness in the middle before a sharp finish. Mild alcohol throughout. I did not really get any maple character out of it. 7+ Aroma is alcoholic at first, modest hops, muted sweet citrus. 7+ Smooth average plus bodied palate. Decent, but not what I had hoped. Cask at Coles, Buffalo

UPDATED: NOV 9, 2012 Pour out of 750 mL bottle is hazy orange-red with big thick white head, lacing and lasting for a long time, at least 3-4 fingers worth, lacing fairly well. Aroma has some notes of lemon, biscuit, some pine and grass notes, little to no maple syrup but a bit light on the nose, with a slight mineral note as well. Taste is completely different however, some nice grapefruit and orange notes with a big maple syrup note in the middle, some slight caramel, finishing fairly sweet but with a slight lemony bitter.

UPDATED: MAR 25, 2012 Draft at CAH. Pours hazy orangy with off-white head. Nose is hopcitrus, tropical fruity, resiny, with peppery and caramel malt notes. Tastes very complex, with a big resiny hop flavor, tengarine, honeydew, black pepper, and some marmaladey sweetness. Well hidden alcohol, and this is as good as I figured it would be. Re-rate 25-Mar-2012. Bomber from RR St. Pours copper with frothy off-white head. Nose is piney hops, resiny, sticky, with caramel malt, hops, florals, and peppery flavors. Im kicking this down a bit because quite simply it doesn;t seem as good to me as either the 60 or the 90 separately. There is no synergism here, but rather this one seems less than the sum of its parts.
