COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours hazy deep golden with a huge off-white head. Aroma has notes of malt, caramel, orange, citrus and pine. Taste is medium sweet and medium bitter with a fruity finish. Body is medium, texture is oily, carbonation is soft.

Bottle... Lightly-hazed amber ale with a large, fluffy, white head. Excellent retention. Dusty, grainy, musky aroma. Medium-bodied with lively carbonation. The flavor is acrid, earthy and medium bitter Ė components I donít normally enjoy. However, a thoughtful hop bill and hopping schedule - along with a nice hint of maple wood - really sells me on this beer. Finishes mildly salty and modestly bitter with a whisper of sweet maple syrup. Iím gonna be drinking more of this.

Bottle @ Danís house. Hazy, golden orange appearance with a big, off white head. Rich piney, a bit sappy hoppy, somewhat spicy, caramelized aroma with hints of light citrus fruits. A bit syrupy, light maple, sappy, caramel, piney, orange citrusy hoppy flavor. Pretty easy drinking.

Botella. Hazy orange colour with a huge beige head. Sweet old fruity like quite hoppy aroma. Good mouthfeel, sweet (old) fruity hoppy citrus like flavour.

Cask at DFH Rebohoth Beach. Poured a slightly hazy orange with a big creamy, dense, yellowish, buttermilk nitro head that left excellent sheety cask lacing. Aroma is herbal hops, fresh herbs, lemon, citrus. Taste is spicy hops, leafy hops, pepper, alcohol, citrus peels, pine forest bitterness. Very nice overall. Soft carbonation, creamy palate.

750ml bottle, shared with friends. 2012 edition. Huge foamy off-white head. Sort of hazy amber color. Some lace. Lighter carbonation, smooth, very dry texture. An IPA with a maple syrup note. Better than 60 minute (which I think is just OK), but a lot different than 90m, which is usually pretty malty-sweet in my experience. This is a unique brew from either one of those two, and itís not bad at all. Nice light sweet taste, lighter bitter. Interesting, unique and decent, pretty good brew.

2010-12-03. Hazy dark amber with a tiny head that fades. 3+ Flavour has a sharp citrus bitterness up front, sweetness in the middle before a sharp finish. Mild alcohol throughout. I did not really get any maple character out of it. 7+ Aroma is alcoholic at first, modest hops, muted sweet citrus. 7+ Smooth average plus bodied palate. Decent, but not what I had hoped. Cask at Coleís, Buffalo
