COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle split with mora2000 at the Holy Grail. Pours with a hazed golden body with a massive, lasting white head with incredible lace, good retention, rings and rings of lace. Great looking beer. Aromas are herbal, honey, maple, dry, floral, citrus, hops, spice, mildly bready, and biscuity malt. Herbal and grassy hop character. Flavors are of honey, some biscuity malt, nicely balanced hop character, floral, citrus, grapefruit. Hoppy. Medium to livelier bubbles, dry, fuller bodied. East Coast.

UPDATED: MAR 25, 2012 Draft at CAH. Pours hazy orangy with off-white head. Nose is hopcitrus, tropical fruity, resiny, with peppery and caramel malt notes. Tastes very complex, with a big resiny hop flavor, tengarine, honeydew, black pepper, and some marmaladey sweetness. Well hidden alcohol, and this is as good as I figured it would be. Re-rate 25-Mar-2012. Bomber from RR St. Pours copper with frothy off-white head. Nose is piney hops, resiny, sticky, with caramel malt, hops, florals, and peppery flavors. I’m kicking this down a bit because quite simply it doesn;t seem as good to me as either the 60 or the 90 separately. There is no synergism here, but rather this one seems less than the sum of its parts.

2010-12-03. Hazy dark amber with a tiny head that fades. 3+ Flavour has a sharp citrus bitterness up front, sweetness in the middle before a sharp finish. Mild alcohol throughout. I did not really get any maple character out of it. 7+ Aroma is alcoholic at first, modest hops, muted sweet citrus. 7+ Smooth average plus bodied palate. Decent, but not what I had hoped. Cask at Cole’s, Buffalo

Pours hazy deep golden with a huge off-white head. Aroma has notes of malt, caramel, orange, citrus and pine. Taste is medium sweet and medium bitter with a fruity finish. Body is medium, texture is oily, carbonation is soft.

Cask (handpump) at the White Horse American Beer Festival, July 2009. Amber colour. Slightly clammy, verging on locker room sweat, aroma but loads of nice hop. Classic leafy, perfumed hop stuff. Sweetish but tasty with a good bite on the finish. Not quite up to the 90 Minute in my eyes but still a nice drop.

750 ml bottle shared with my buddies. It pours a hazy golden orange with a frothy yellowish white head. The smell is mostly malty. There is a nice grapefruit tinge but mostly pleasant grains and some caramel. The flavor is nice. A mixture of really good malts and a good bit of hops. I am not a fan of the 60 but not the 90, this one is better than either. A nice one.

750ml bottle: Pours a clear bright golden with an airy froth of white head. Has a fresh piny hop nose with some light citrus and pale malty sweetness. Starts with good fullness and lightly toasted crystal malty sweetness with a healthy dose of hop resin and bitter balance before a drier crisp bittersweet finish. Dangerously drinkable, but wish it were available in 6 packs.

750mL bottle, bottled on 5/13/14. Poured cloudy medium orange with some nice white lacing. The aroma picked up sweet caramel and maple syrup topped by mostly citrus hops.. really nice, but the hops seemed muted. The flavor found sweet caramel and maple syrup again (more maple on the back end and through the finish), with spicy pine and citrus bitterness around.. almost oaky toward the back.. finished sweet, but with a nice peppery kick. Medium-bodied with fairly full carbonation.. not as hoppy as I hoped for, but it was mighty tasty.

A Mes rate: cask handpull at the Sloany Pony.
Johnny cask, what a great name! Light orange brown and just about holding onto a thin white film. Excellent aroma. Fruity as hell with some really good U.S. hoppage as you would expect but the slight caramel and maple adds intrest and complexity. Possibly a little less excitement in the mouth but that could quite possibly be down to the conditioning at the Pony, plus cask beers tend not to travel the Atlantic too well. All that is great about the aroma is here but it doesn’t sit quite so well. A little hot and slightly astringent but an enjoyable experience. To sum it up, good stuff but the some is not greater than its parts.

Bottle. Amber beer with a whitish head. Grapefruit and pine aroma. Pine and grapefruit flavor with earthiness. Medium bodied. Good bitterness. Pine and earth linger with light woodsiness and grapefruit.
