Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Drank out of 750ml bottle in to short pilsner glass at home. Aroma- light notes of orange and hops. Not overwhelming. Appearance- light golden orange with frothy head and some carbonation. Makes you want to guzzle it. Very appealing Taste- good light flavor with smoky hops taste. A little more bitter than most IPAs. Palate- lightly burnt mouthfeel but not bad aftertaste. A little bitter as well. Overall- good IPA. Not the best but not bad at all

cask at Capones, hazy golden orange color with small to medium head. Notes of ashy hop, pine, sweet crystal and caramel malt, dark fruit, and wood. No bright citrus in this india pale ale. Pass

Bottle. Pours hazy, with large suspended sediment, frothy, lasting head with decent lacing. Can’t taste or smell the maple-and I’m from Vermont, well balanced, appropriate but lingering carbonation, light to medium body, sticky sweet and lightly bitter finish. Not terribly exciting, probably won’t have it again.

Taster at The Mondial de la biere Montréal. The color is a hazy honey with a thick beige head. The aroma is of hops, and citrus fruits. The taste also of hops plus cereals and citrus fruits, malt and yeast. To my liking I prefer the 90 minute I.P.A.

Aroma is a little sweet. Taste has medium bitter hops, but nicely balanced. Overall a very good IPA.

Pours a hazy golden Amber with a huge head of white creamy foam and plenty of lacing. Aroma is lightly sweet citrus with some earthy notes. Medium thick body, smooth and syrupy texture. Taste is fairly dry, lightly sweet with some hints of spice like cloves or coriander. Leaves a numbing sensation on the tongue and roof of the mouth. Not bad, just not as flavorful or enjoyable as I had expected. ---Rated via Beer Buddy for iPhone

Nice looking beer. Deep, golden color with huge white head. Aroma of tropical fruits , malt and hint of maple syrup. Bitterness and malty sweetness are intertwined. Hops dominate in finish . Medium body , rather low carbonation. Great IPA.

Pours slight hazy copper orange with a large white head that slowly fades to a thick frothy cap and has excellent retention. AROMA: crisp malt, coriander, pineapple, pine resin, herbal hops, herbs, slight earthy funk, peppercorn, maple, woody, citrus, caramel, hay, roasty, phenols and spices. TASTE: crisp malt, coriander, pineapple, pine resin, hop spice, herbs, slight earthy funk, peppercorn, maple, woody, citrus, caramel, hay, roasty, phenols and spices. AFTER TASTE: maple,, malt, peppercorn, hop spice, herbs, citrus and spices with an oily spiced malty finish.
