COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

750ml bottle poured in snifter. Pours amber with a little haze. Moderate fluffy white head with some lacing, good retention. Grapefruit and pine aroma with hints of pineapple. Pleasant hoppy pine flavor in the beginning with a light citrus/sweet fruit finish and a touch of malt. Well carbonated and crisp, nice mouth feel. Overall a great beer, enjoyed this IPA.

Pours a hazy golden orange color. The nose is light grapefruit citrus with hints of malt and brown sugar. The mouthfeel is coating but slightly flabby. The maple syrup barely comes through on the finish - as flavor not sweet.

Look: pours a dark orange. White thick head that hangs around. Slightly cloudy. Smell: sweet. Syrupy. Tropical fruit. Coconuts. Pineapple. Taste: dank. Tropical fruit. Pineapple. Mango. Fresh berries. Ginger ale. Feel: light and refreshing. Not extremely dry and bitter like a normal IPA. But just enough. Overall: great beer. Good to sit next to the grill with while waiting on dinner.

2014 bottle. Pours a hazy copper color with a big cream colored head. Aromas of citrus/floral hops. The taste is grass/floral hop along with some of the citrus peel bitterness. The Foam That Will Not Die. What dark, unspeakable necromancy was employed to bewitch this brew with such unearthly amounts of carbonation? Such a thick, pillowy meringue-like head of foam, angling off to maddening non-Euclidean angles. If one stares at it too long, one’s vision is pulled off into alternate dimensions, populated by whispering, gibbering daemons from beyond the stars, from before time began. A bit of a tinny aftertaste, and I am disappointed that I cannot detect any maple syrup.

Interesting beer. The taste is way better than the aroma. I was getting a garlic kind of deli pickle smell here initially. That went away and got a lot of syrup sweetness which makes sense. Not much of anything else on the aroma for me. The taste though is a whole different story. Lots of sweetness from the syrup which is actually perfect here. It just works. Lots of hop bitterness but the balance is great and it’s awesome stuff.

UPDATED: JUL 11, 2014 I like the maple syrup. The beer does not venture much away from the dogfish formula. It really just tastes like a stronger 60 min ipa but I appreciate The sweetness burst that the syrup imbued. It?s not worth chasing after the beer for just that. A bit more hoppy than youd expect but not by much.

I didn’t care for this a ton. Half snifter pour of amber with decent head, but nose was sharp and malted mostly. Some hops but not a ton. Flavor was similar, nothing really spectacular about it. Better luck next time.

Bottle. Almost clear golden liquid with medium to huge white head. Aroma of tangerine, citrus, bread, flowers, mango, maple and grapefruit. Taste is light sweet and light to medium bitter with notes of mango, tangerine, citrus and maple syrup. Medium bodied with medium carbonation. Too sweet.
