Johnny Cask has entered the building! Weíve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wonít be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours orange with a large white, dense head. Smells woody with hints of maple syrup sweetness and some bitter hops. Taste is bitter, woody, tannic, and has some maple sweetness. Medium-bodied with a smooth texture and mild mouth-carbonation, Dogfish Head 75 Minute IPA finishes with some mild sweetness.

The perfect IPA and the description is spot on (when a 60 min is too little and a 90 min is too much). Citrus hop aroma makes me think of lemons. I had this in a bottle and Iím dying to try it on cask.

Rating from March 2013....Bottle...Wow, my two favorite IPAís blended....so by default does this become my favorite?.....Pours a perfect copper with a fluffy off-white head...the lacing sticks immediately after the foam settles...Iím having a little trouble finding the maple syrup at first, shows up a tad mid-palate, then the hops take over and finish...not upset by any means...this beer is perfect in my eyes and mouth!

Scored a bottle in Boston. Very cloudy orange, with a big, pillowy head. Really nice nose -- juicy citrus, a shade of pine, with a biiiig caramel backbone showing a bit of that maple. Flavor is very full -- a caramel-backed thick IPA up front, with a burst of bitter citrus hops surging like a wave toward the finish. At the very end, it fades into that smooth maple -- really, really nice

Poured from large bomber. Aroma is sweet and slightly malty. a heady white foam tops this beautiful beer. Taste is splendid, smooth, complex, and finishes with a sweet hop blend. Really a special treat having this beer. Drove 45 minutes over the state line for this one. Well worth it. Cheers

Iíve been waiting for a long time to sample this brew! I was finally in Rehoboth when DFH offered on their handpump. My wife was enough kind enough to allow us to stop in for one on our anniversary. And man, was I not disappointed! The 75 Minute is awesome! It pours a cloudy orange color with a very thick white head. The head leaves a beautifully tiered cascade down the sides of the glass. The body of the 75 Minute is so smooth and drinkable. I could have sat there all night and drank this beer. But like I said, it was my anniversary; I was lucky enough just to be there for one pint. I wasnít going to press my luck! The nose was full of hops, with lots of citrus and a hint of malt. The flavors were incredibly delicious, with a smooth tone of spicy and dry hops, along with some hints of bread and malt. The finish was dry, hoppy and spicy, with some smooth notes of bready malts. This beer was definitely worth the wait! Hopefully Iíll be lucky enough to enjoy this masterpiece again!

Bottle. Lighter than I expected. The head is towering and takes a long time to settle ... The retention is amazing. So is the aroma ... hints of a big alcohol laden brew. This drinks with a spicy, earthy assault on the palate. The hops are full-on leafy ... big time. My buddy calls it out ... like Aprihop without the Apri. Good, good stuff. (#4697, 7/15/2012)

It pours a beautiful light golden orange leaving the same color body with some nice haziness added. A one inch white foamy head appears inside the nonic pint glass. The smell has the maple syrup up front, but not overbearing, because I can still smell the hops, some light grapefruit and some light malts. The taste is sweet with the maple syrup up front but not overbearing still combined nicely with the hops, grapefruit and malts. The palate is between light and medium, no problem finishing off the bomber that was sitting on my buddyís store shelf since August. Overall, this is an excellent American IPA that is borderline English because its so sweet. Next time, I want this with pancakes and sausage at breakfast.

This was one of the best beers I have ever had. I was totally surprised by it. It looks amazing in the DFH signature glass. Golden bubbly IPA with about 4 fingers of white head. Very delightful and refreshing IPA. The sweetness from the syrup is evident and it perfectly complements the hop bitterness from the 60-90 blend. I will get this anytime I can find it.
