COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours translucent orange with a thick, creamy head. Beautiful. Not a powerful smell; citrus and hops a bit. Taste: citrus and hops, some sweetness. As a Vermonter, I’m a bit disappointed in the "maple syrup" flavor they claim. I get hints of it, but not as much as I’d hoped for. It’s very much a milder version of the 90 minute. A bit of sweetness, some yeast, some salt. Touch of wood. As it warms, there’s a bit of spiciness to it...cinnamon and others. More yeast comes out. A bit sticky on the finish, with citrusy hops.

RSRIZZO (1855) - Colorado Springs, Colorado, USA - OCT 17, 2014
750ml bottle poured into a Tulip at 42°. Color is a bright gold with good carbonation and topped off with a tall rocky white head. Aroma is heavy pine, citrus and a light malty sweetness. It has a medium body with a light crisp mouth feel. Flavor comes in citrusy with a mild pine note, then a bit of malt shows giving a nice sweetness that brings apple and pineapple in. As the after taste rolls in the sweetness mellows letting the pineapple and citrus stand out. Overall it may be one of the best IPAs I have ever had, its light and drinkable with bold yet nicely balanced flavors.

Bomber shared. Pours a murky gold with giant frothy cap. Aroma of tropical fruit, caramel, sweet citrus, biscuit. Taste is a perfect balance of sweet and drawn out bitterness. Creamy and sticky mouthfeel.

750ml from Whole Paycheck. Cloudy orange in color with a lasting white head that leaves foam. The aroma is very citrusy, with orange and tangerine, supported by pine and resin. The flavor starts with sweet, sugary malt that yields to a bitter citrus hop finish. Fairly full body, mildly syrupy, with a good natural-feeling carbonation level. Overall a good beer, better than most I’ve recently had from DFH.

Cloudy gold to amber pour with a 2 finger, creamy off white head that has great retention and leaves nice lacing. Aroma is caramel, citrus, a little toffee, herbal and spicy hops. Flavor is sweet caramel, toast and biscuit up front, then some sweet woody maple notes, oily grain, light cardboard oxidization, sweet, dull citrus notes, followed by bright acidic citrus notes. Medium body with a heavy, blanketing and fairly sharp carbonation. Pretty good overall, but kinda dull and oxidized, sort of Old Ale meets kinda old IPA with decently fresh dry hopping and maple syrup, for some reason.

Bottle from Julio’s. Pours out a decent looking medium golden color with a frothy white head that settles to a thick lace. However, the aroma and flavors are overly sweet. Not very well balanced or bitter at all. Quite disappointing.

"interesting take an ipa (though i’d hardly call it a double). maple syrup makes for a pleasing and unique bittersweet finish. different than the brandied fruitcake of the 90 minute, but similar...and this is a lighter beer. More aggressively hopped than 60, and bottle conditioned for a different, dryer feel. pretty nice...not sure it’s worth the extra coin more than very ocassionally over 60 or 90...or Squall."
