Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

A sweeter and nuttier IPA. I don’t what the back-story is behind this that they chose maple syrup. The aftertaste is very nice. The mouthfeel is a bit too fizzy for me; it’s a shame that I had this from the bottle because I know for a fact that if I was at the brewery and had it on cask, it’d be a lot smoother and nicer. This is good, but what’s right for me is their 90 :o)

I didn’t care for this a ton. Half snifter pour of amber with decent head, but nose was sharp and malted mostly. Some hops but not a ton. Flavor was similar, nothing really spectacular about it. Better luck next time.

Bottle. Almost clear golden liquid with medium to huge white head. Aroma of tangerine, citrus, bread, flowers, mango, maple and grapefruit. Taste is light sweet and light to medium bitter with notes of mango, tangerine, citrus and maple syrup. Medium bodied with medium carbonation. Too sweet.

Pours a cloudy gold, with ample white head. Aroma of complex hops. Taste is hoppy and rich, slightly sweet. I can’t really taste the maple, but it blends in and enhances the complexity. Although IPAs are not my favorite variety, this one is quite good. Thumbs up.

Crazy over carbonated. Nice, pillowy head, but tons and tons of it. Year+ old bottle so maybe a bit of that maple syrup hit a second/third fermentation or something. Appearance took a hit from 5 pint glasses this produced slowly pouring this as much as possible. Aroma also took a hit b/c this much carbonation skewed it. Beer is pretty tasty. Maple isn’t really there but there is a nice sweetness to balance the bitterness (which there is a lot of).

Bottle thanks to my friend Johnny for sharing: Poured a cloudy with huge white head. Sweet malts and nice hops. Mellowed hops, with sweet malts and maple backbone.

Another minute IPA from a brewery that will brew any style, type or collaboration of beer. I personally cannot tell the difference between this beer and the 60 or 90 except for the ABV.

Ressemble et sent comme la leo’s. Beaucoup plus subtile en bouche, moins de fruits exotiques. Rond en final, contrairement à la quantité relativement massive de houblon. Qu’elle houblons ya là-dedans?

Smells of maple and malt. Slightly sweet and hoppy. A very good beer that truely mixes the 60 and 90 min ipas. Had this on firkin. Almost made it better due to the fact it was not carbonated.

Pours a hazy rust orange. Had a sweet citrus and honey aroma. Taste is sweeter than expected with mostly citrus, caramel, grains and very little hops. Not lingering hop aftertaste.
