Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

A 750 ml bottle from Dog and Bull in Croydon, poured into a Duvel tulip. This appeared as a clear copper with a large white head. This settled to a coating but left ample lacing. The nose was pine, citrus (especially lemon and orange) and some maple syrup. Taste was a nice interplay of hops and sweetness with emphasis on notes of citrus, some breadiness and the maple syrup. Body was medium, creamy and with a healthy carbonation. This is NOT a hop bomb, but a pleasant and remarkably well-balanced IPA, and it is more than just a combination of 60 and 90- minute. I like both but might like this even better than either. If I can get any more, I am eager to try this again SOON!

Aroma is citrus and a touch of maple, taste is a caramel malts, citrus hops, and maple if I look for it, this is fine, but cost is a little higher than I would like to pay for this

Hazy orange-yellow with a big, white head. The aroma has citrus and light pine mixed with syrup and a touch of apricot. It has a medium body with silky smooth texture and good carbonation. The taste bittersweet with a sweeter finish. The high alcohol is there, but well hidden.

Poured clear golden straw color with a 4-finger off-white head. Piney hops aroma with a touch of maple. Medium body with a lightly oily finish. Flavor of piney hops with a light maple sweetness beneath. A touch of earthy yeast at the back.

Catching up on some old ratings from Untappd -- First rated on 19 Jan 2014. Pretty good, not sure if it’s better than Community’s Mosaic.

This beer had a little too much maple on the nose for me, I was nervous. The taste was pretty damn excellent. I am a huge fan of DFH’s 90 and I enjoy the 60 time to time and the 75’s maple taste adds something that puts it on a level closer to 90 minute. There is a complexity and balance in this which gives it more character than many IPAs in its price range, and the slight maple touch sets it apart from anything else I can recall in this style

HUGE white foamy suds. Clear golden color. Strong hoppy aroma at the bottle and a bit sweeter in the glass. Strong carbonation and heavy weight on the palate. Fruity aftertaste. - Rated via Beer Buddy for iPhone
