COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle. The pour was a hazy medium orange with a huge (3-4 finger) white frothy head that receded at a nice slow steady pace down to a few puddles with a large collar and produced some excellent sheets of lacing. The aroma was of a light biscuit malt, pine and citrus hops and a soapy yeast with hints of maple, caramel and citrus (grapefruit). The taste was moderately bitter with a slight malty maple sweetness early on and then became decently hoppy with a bitter citrus peel presence towards the end. The flavor lasted a good long while after the swallow, with a nice hoppy citrus taste along with a mild sweetness that was left to lie on the taste buds for a little while longer. Mouthfeel was a few steps above light in body with a moderately dry texture and almost prickly carbonation. Overall this is an IPA that is not to overpowering, but does posses a nice sweet hoppiness and is very well balanced. Highly recommended...

Pours a hazy golden colour with a creamy white head. Aroma smells a little of apricots and peaches with some slight floral notes and a little maple syrup. Taste is mildly sweet throughout with a nice bitterness that is not too strong. Medium body, smooth on the palate, and livelier carbonation. Overall a good IPA.

Dégustée après 9 mois. Manque de fraicheur évident. Robe brune-orangée avec de massives particules croulantes au fond du verre. Arômes de malt vieillit, pamplemousse, citron et eau d’érable. En bouche, malt caramélisé, érable subtil, orange, pamplemousse. On sent tout suite que le liquide manque de fraîcheur. Pas mauvaise mais à réessayer dans un meilleur contexte.

Light gold color with a massive head even after a gentle pour and globs of lacing. Smells of caramel and citrus. Great flavors and balance with a slight sweetness. Creamy, smooth, and highly carbonated allowing a pleasant mouthfeel. Great IPA that is easy to drink and highly recommended!

From 24oz bottle to snifter. Pour is a deep haxy yellow with a thick white head. Nose is super hoppy, alcohol, piney, floral. Taste is medium-heavy, very bitter with touches of sweetness coming through. Awesome mouthfeel, finishes very crisp. Unreal ipa

Pours a golden orange color with a white head. Hop, citrus, caramel, pine, citrus and malt aroma. Hop, citrus, maple, sugar, pine and malt flavors. Medium body and carbonation. Hop and maple finish.

This beer pours a hazy golden orange color, with a lot of sediment floating around, with a thick creamy white head that stuck around and left some great lacing around the glass. This beer is heavily carbonated and has lots of streaming bubbles coming up the glass. The aroma reminds me of the 60 and 90 min ipa’s. I pick up pine, citrus, hop resin, and quite a bit of sweetness which I am assuming is from the maple syrup. In the taste, I pick up some citrus up front that leads into some bitter pine hops and resin oil. I pick up the maple syrup towards the end and in the aftertaste. I was expecting this to be more of a hop bomb but its not, I was quite surprised. The maple syrup really sweetens out the beer. This beer is very tasty and very well balanced, I’m really enjoying it. The mouthfeel is on the medium side and drinkability is super high. I highly recommend anyone to try this.

A Christmas present from Maxbier. Pours cloudy bronze color with a huge thick foamy off white head that rises 2 inches above the glass. You can tell it’s bottle conditioned from the pop sound the bottle makes when opened. Sweet caramel malty aroma with yeasty bready flavor and a earty pine hop finish. Thick sweet malty start with the earthy maple syrup flavor. Finishes with a nice pine hopiness. The sweetness from the maple syrup really balances out the hops. Really nice! Cheers to Maxbier!

Prefer tap to bottle which does not maintain flavor. Just had a pour at Uno’s in Maple Shade. I’ve had better but I love this beer and have since 2011.

From the bigger-than-bomber bottle this pours a clear golden body with a big foamy, bubbly head. The aroma is strong with citrus hop scents - pink grapefruit, tangerine, zest - and perhaps a hit of pine. The flavor begins with a light cereal sweetness and a touch of caramel. This is soon surpassed by hop tastes reflective of the nose. The bitterness level is strong, but not as intense as what I was looking (hoping?) for. It finishes with a soft sweetness and a prolonged zesty bitterness. I’ll be having more.
