Commercial Description:
Esquire Magazine calls our 90 Minute I.I.PA., "perhaps the best I.P.A. in America." An Imperial I.P.A. brewed to be savored from a snifter. A big beer with a great malt backbone that stands up to the extreme hopping rate. This beer is an excellent candidate for use with Randall The Enamel Animal! 90 ibu
Tasting Notes: Brandied fruitcake, raisiney, citrusy.
Food Pairing recommendations: Pork chops, beef, grilled fish, frites, focaccia, split pea soup, Stilton cheese & escargot.
Glassware recommendation: Snifter
Wine comparable: Sauvignon Blanc

Hazy peach body is well carbonated with a small, but sturdy, eggshell head. Fruity syrupy malt aroma with plenty of hop backing of pine and citrus. Taste is well balanced with an avalanche of malts and hops struggling for supremacy. Very nicely done.

A strong flavor with a crisp and definite aftertaste of bitter hops. The good sort of bitter hop flavor though. While not terribly subtle or complex in taste, it is an excellent example of its kind, though not very memorable for anything other than being a good beer.

On tap at Sergios in KY. One of my favorite beers. Just the right balance of hops and malt. Sweetish flavor reminds you that the hops are prepared extra-long for the sugars to be released. A slight alcohol flavor stands out, but just enough to add complexity and not ruin the experience.

back to back off the 60 minute brew. noticeably darker. still really clear. same look as the 60 minute, just darker. notably stronger aroma and taste, which is what you’ld expect. i’d say i like it more, but i would usually go for imperial over standard. can’t hate on the 9%, but my friend noted you could kind of taste it. still not bad. i’d say it’s an understandable step up from the 60 minute, but keeping the 60 on hand would be good for when you wouldnt want to go the whole way to 90. can’t wait to taste the 120.

Light copper color with nice carbonation and a nice big off white head. Aroma smacks you in the nose. Pine, citrus and a nice sweetness. Big bitter in the mouth. Tasted more alcohol than I thought I would (I know it is 9%) and it never really came together for me at the end. A definite hophead’s dream but a little over the top for me.

Sweet flavor for an IPA. The bitterness is certainly there but finishes nice on the tongue. Not overly bitter. Very well balanced. Smooth maltiness covers up the stog alcohol. Very well balanced overall. I really enjoyed this beer!!
