COMMERCIAL DESCRIPTION
This beer is based on a beverage that may have been enjoyed by the Etruscans of Ancient Italy around 800 BC. For this one Sam traveled to Italy with Dr. Pat McGovern where they met up with Teo and Leo (Samís buddies from Baladin Brewery and Birra Del Borgo respectively) and researched ingredients from various Etruscan dig sites. The result of their research is a strong ale containing an Italian heirloom grain called Cappelli Senatore, along with pomegranate juice, raisins, and hazelnut flour, together with 3 types of honey: chestnut, wildflower, and clover. The brew was then spiced with several hop flowers, Gentian root and tree resin (think Myrrh) in the kettle. To simulate fermentation in a bronze vessel (which possibly would have been what the Etruscans used), we actually tied a bronze plate inside our modern stainless fermenter which was suspended in the wort as it fermented. The aroma is dominated by pomegranate and spice from the yeast. The flavor is an intriguing interplay between the tangy pomegranate fruit and nuttiness from the hazelnut flower. One can definitely envision sipping this unique brew while relaxing on the Mediterranean coast. Versions of this brew will also be made at Baladin and Birra Del Borgo with the same ingredients but varying processes.

First impression was that it had a bit of a bitter smell to it, which didnít seem to match up with my expectations of the description and the pour. It came out light and slightly bubbly, like a refreshing cider. You definitely could taste the fruit, but as a long-time pomegranate fan, I didnít get as much of a tartness that I was looking for. I guess the honey really cut into that. Wasnít too bad overall, but itís not one Iíd actively pursue in the future.

On tap. Pours a clear light brown bronze with little off-white head and minimal lacing. Smells exactly like a saison. Tastes sweet, some unusual flavors, flowery, honey, actually very nice. The bitterness is mild and the aftertaste is extremely pleasant.

From notes. Split this one with Steve at Danís Downtown Tavern on July 01. The pour is a muddy amber color with a couple golden hues shining through. There is an incredibly fizzy white head that falls down and reminds me of a soda. Thatís what it looks like. A beer shouldnít fizz like this. The aroma is incredibly sweet. There is a lot of dark fruit and spiciness to it, like itís a dark fruit-inspired saison. A definite breadiness exists, and a light Belgian malt. The flavor is dark fruits and Belgian yeast. Itís just really Belgian ale dominated. The mouth feel is terrible. Itís thin, yet syrupy, with a very effervescent carbonation that letís the Belgian tendencies just jump off of the tongue. It doesnít end quick enough. This isnít my jam. Not by a long shot.

Amber colored, minimal head. Aroma is strong honey with sweet malts, light raisin, lightly spicy. Medium bodied, sweet honey flavor dominates with a touch of raisin.

Leave is to Dogfish. Again you smell and taste every damn ingredient, which is amazing. Itís a great beer, itís perhaps a bit not my style thought because it tastes kinda regular after a while

Bottle thanks to cgarvieuk dregs run. Appearance - deep amber with some head. Nose - orange and light red fruits Taste - more oranges and red cherries. Palate - close to medium bodied with a creamy texture and a long dry tangy texture. Overall - interesting and decent.
