COMMERCIAL DESCRIPTION
This beer is based on a beverage that may have been enjoyed by the Etruscans of Ancient Italy around 800 BC. For this one Sam traveled to Italy with Dr. Pat McGovern where they met up with Teo and Leo (Samís buddies from Baladin Brewery and Birra Del Borgo respectively) and researched ingredients from various Etruscan dig sites. The result of their research is a strong ale containing an Italian heirloom grain called Cappelli Senatore, along with pomegranate juice, raisins, and hazelnut flour, together with 3 types of honey: chestnut, wildflower, and clover. The brew was then spiced with several hop flowers, Gentian root and tree resin (think Myrrh) in the kettle. To simulate fermentation in a bronze vessel (which possibly would have been what the Etruscans used), we actually tied a bronze plate inside our modern stainless fermenter which was suspended in the wort as it fermented. The aroma is dominated by pomegranate and spice from the yeast. The flavor is an intriguing interplay between the tangy pomegranate fruit and nuttiness from the hazelnut flower. One can definitely envision sipping this unique brew while relaxing on the Mediterranean coast. Versions of this brew will also be made at Baladin and Birra Del Borgo with the same ingredients but varying processes.

Poured orange-red with an extremely fizzy head that faded fast, there are so many aromas going on here, mostly fruit and sweetness, Iím picking up grape, some sort of dark fruit juice and alcohol is noticable. The taste is fruit forward with a lot of vinous character, almost like if you mixed beer and wine, also it is very sweet Iím assuming because of the honey. The mouth feel is medium to light and heavily carbonated. Overall very interesting and one of a kind. If I had to compare this to anything else it is similar to midas touch in some ways.

750ml Bottle Sept 2014. Slight sour beer-like base, resin center, great peppery aroma. Iím a sucker for "ancient" ales. Loved it.

"Interesting spices in this one, it is both unique, and very Dogfish Head. Malty sweet and yeasty. Honey is light, but present in nose and flavor. Good prickly feel. Cool beer if not quite worth the price."

Bottle - small foamy head, murky dark brown color, definite fruity (pomegranate I guess) aroma and flavor, some dark fruit and nutty notes in there too, definitely unique and pretty good overall ---Rated via Beer Buddy for iPhone

Bottle (12 oz $16): Interesting beer. Pours mostly clear golden bronze with small white head. Quite a bit of carbonation. Strong pomegranate taste and almost wine like. These to my should be classified a fruit beer.

Big bottle pour@5e Mondial de la BiŤre, Mulhouse FR, thx Roland & Martina. Viscous brown-amber pour. Nose of berry&grape-infused maple syrup with a hazelnut edge. Dryish mouthfeel with some tannins. Very vinous: chardonnay, pomegranate juice, spiced wine dunked with a shot of Enzianschnaps, some hard to place caramel fruitiness. Easier to drink than some other DFH molecular archeological brews.

Poured from bottle to Glass. Deep copper hue with off white head. Aroma is figs, toffee, honey, straw, raisins. Mouthfeel is nice with a medium body and crisp carbonation. Taste is sweet throughout with an ethanol finish. Overall this brew was interesting.

Transfer from BA review on 3-27-13- Served on tap in a 10 oz chalice glass Appearance- The beer is served a brownish-bronze color with a reddish tint. Upon serving there are just wisps of foam on the top of the brew, which fade fast, leaving almost no lace. Smell Ė The aroma is a big complex mix. The strongest aromas are of a fruity and wheaty aroma with the fruity being of orange, pomegranate, and wine grapes. Mixed with these aromas is a smell of honey as well as a yeast and some spice. Taste Ė The taste starts out with a sweeter-fruitier flavor of pomegranate with some wheat and yeast flavors as well. As the flavor advances from the beginning, some notes of a honey sweetness as well as orange and clover come to the tongue. A light nuttiness comes to the tongue more toward the end along with some, floral and herbal hop and other spice flavors that I just canít place. At the very end, a somewhat wine like flavor comes to the tongue leaving a slightly bittered but still fruity flavor to linger. Mouthfeel Ė The body of the beer is on the thinner side in terms of its creaminess and thickness with a carbonation level that is rather average. The thinner body and moderate carbonation, of tiny carbonation bubbles, creates a very crisp feel for the brew with it being fantastic for the fruit, wine, and rather extensive list of other flavors that exist within. Overall Ė A very interesting brew. It has an odd mix of flavors, which in the end work out rather well together. I would say this is one that is worth a try as it is quite unique and complex, but yet still very tasty and drinkable.

Draft: Poured a light amber color ale with a medium size foamy head with OK retention and minimal lacing. Aroma of hazelnut and unrefined grain is more or less interesting. Taste is also dominated by unrefined grain with some strong notes of hazelnut with some residual sugars which is probably derived of the honey that was added to this beer. Body is light with medium carbonation and with no apparent alcohol. I appreciate all the historical research that went into this beer but not sure I really enjoy the final product enough to try this one again.
