Pours a nice light brown with a small sweet head. Nice hoppy flavor that is smoothed out by the aging in the oak. The amazing taste stays in your mouth for a time to let you linger in the greatness!!!! and great news it gets better with age!!!!! Quevillon (1522), Sainte-Thérèse, Quebec, Canada

very floral, grassy aroma, pinapple, grapefruit and all that. also some oak and vanilla, though a bit faint.
first thing in the taste is alcohol, leading to a very smooth, relatively mild (for DFH) bitter finish.
there’s some sweetness to balance, maybe caramel and toffee, and also significant vanilla.
thick creamy body, subtle carbonation.
very nice. Jsawyer (282), Glenside, Pennsylvania, USA
| 4.1 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 4/5 | 17/20 | May 28, 2009 Bottle. Poured almost a full inch of white head atop a hauntingly crystalline amber body. It smells like 90 minute but woody, not quite creamy oak but reminiscent of old timber, and certainly a much more mature brew. Flavor was very grapefruit, caramelized malts, some chocolate, subdued fruitiness like banana but just barely perceptible, slight vanilla, and again old timber that has probably been used since it adds just a hint of je ne sais pas and earthiness. Palate was extremely reminiscent of an abbey dubbel with some slight carbonation in the finish. Very good beer, I’m thinking Ratebeer could use a oaked IPA category now. cking (1019), North Canton, Ohio, USA
| 4.2 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 4/5 | 9/10 | 4/5 | 16/20 | May 27, 2009 Fine brew, has a lot going on in a good, subtle fashion. Copper in color with a large lasting head and thick lacing. Wonderful medley of aromas from caramel to citrus with heavy woody and flowery scents. The beer has a boozy kick then settles into a drawn out smoothness. Good bitterness, although I’d say the hops are giving way to a rounded sweetness. Flavors mirror the aroma. Woody and earthy with lemon and grapefruit. Evergreen followed by toast and caramel. Oh my this is a fine treat.
