A sort of Saison, fermented with Botrytis-infected Viognier and Pinot Gris grapes. This beer is brewed with Pils malt, organic Hard Red Winter Wheat malt, Warrior hops, Willamette hops, Liberty hops, Saison yeast and Botrytis wine must.

UPDATED: JUN 26, 2012 750. Such a clear golden straw ale, beautiful. Smells of light fruits & white wines. Yeast/dough Puckering mouthfeel that leaves me feeling I’m gulping wine. Funky fun yet kinda awkward.

Dogfish may not always be to my taste, but the consistent high quality is undeniable. The pour is fine gold with a thin white head fed by constant stream of fine bubbles. The aroma is the scent of an orchard. This is a definite saisson style brew. The taste is white grape with a strong, warm alcohol bite and a bitter finish. Appearance: clear medium gold, with a short, fizzy white head and syrupy legs. Aroma: light citrus, yeast, pears, saltine crackers, and a bit of funk. Taste: sweet, with flavors of white grape juice, citrus, grains, pepper, star anise, white wine and champagne. Finish: dry, tart, slightly sour, with a lingering light astringency. Notes: Smells like a saison, tastes almost like a tripel, finishes like a chardonnay. Very interesting.

23 mar 2012, bottle. Very pale yellow, clear, steady tiny bubbles. Smells like a saison: lightly sweet and straw. Thin body and fizzy. Wow, not what I expected. Champaign and soft white grape juice. Pours a clear pale gold with fluffy white head. Nose is grape juice, blueberries, light malts, some tartness and yeast. Green grape entry with some pear and apples, yeasty notes also coming through with very light malts. Finishes slightly tart and some alcohol. Actually pretty tasty.

Aroma grainy malty feel, soft Noble hop, aromatic with mild touch of chamomile. Soapy walls.
Appearance bright golden look with medium plus bright white top. Nice lace shown. 4+
Flavor and Palate : some tartness, berry like in character. Tart walls. Soapy late finish. OK but not particular to my taste.

A very different and unique fruit beer, Noble Rot pours a very clear and light golden color with a big white head that leaves some really nice lacing around the glass. Concerning just the color, you could have a hard time picking this out from a mass-produced light swill. The nose features white grapes, yeast, light bread, wheat and a touch of alcohol. The body feels a little spritzy with lots of carbonation. The flavors are sweet, with notes of grapes, alcohol, wheat, barley, lemon, grass and light hops. The finish is very sweet, pushing the line toward sour, too. There is also a truck-load of grapes in the finish. Don’t let the sweet appearance and taste fool you, though, because this beer will sneak up on you quick at 9%!
